No-Bake Cashew Coconut Bites

Energy bites are great snack options for anyone, especially our cleansers. They provide long-lasting energy and help keep you full between meals. This is because most energy bites contain an assortment of healthy fats, complex carbohydrates, fiber, and protein, all of which promote satiety. Essentially, these little bite-size snacks are simple, guilt-free snacks that are great for the whole family.

You don’t have to adhere to a raw vegan or plant-based diet to enjoy these healthy snacks. A great time to eat them is before your workout because they provide you with sustained energy. You can also enjoy one or two as a post-workout snack. Your muscles are like sponges after a workout and the protein and healthy fats in these can help repair and replenish your muscles with the nutrients they require. Supplying your muscles with these nutrients can also help your recovery.

Everyone is very familiar with the afternoon slump, especially those who work desk jobs. Instead of reaching for a late-afternoon cup of coffee, have one or two of these energy bites at the ready. When you are tired or stressed, you often seek out sugar and salt. Not only do these provide you with natural sugars and a subtle hint of sea salt, but they also curb those cravings and help you avoid caffeine late in the day. No-Bake Cashew Coconut Bites

Ingredients

  • 1 c Medjool dates, pitted
  • 1 c raw cashews
  • 3/4 c unsweetened desiccated coconut
  • pinch of sea salt (optional)

Instructions

  1. Add all of the ingredients to a food processor and pulse until you achieve a sticky, dough-like consistency. You may need to stop blending, scrape down the sides, and continue blending a couple times to fully blend the ingredients.
  2. Line a baking sheet or large container with parchment paper and wet your hand with cold water.
  3. Use your hands to form 15 bite-size balls from the blended mixture. Place them on the parchment paper and then place them in the freezer for 20-30 minutes so that they can firm up.
  4. Remove from the freezer and enjoy. Store the remaining energy bites in an airtight container in the fridge for up to two weeks. You can store them in the freezer for up to three months.
