Trust us when we tell you that these vegetable nori wraps are so creamy and delicious. Not only do they provide you with an array of textures, but they also deliver sweet and savory flavors. Each bite seems more balanced than the next, without ever overpowering your palate. Although you can use any mix of fruits and veggies that you enjoy, we feel that the ingredient list creates a perfect harmony.

There is an art to assembling a nori roll. First of all, when you are following a raw vegan diet, you want to make sure that the nori sheets are not roasted or flavored. They do sell raw nori sheets, so make sure you purchase those. Now, the last thing you want is for the actual nori sheet to get soggy when you roll up the contents. For this reason, lay the lettuce down first to act as a barrier between the nori sheet and the cashew cream. You can then lay down a couple other ingredients, followed by another drizzle of cashew cream. After one more layer of ingredients, you are ready to roll.

Ideally, you want to assemble all of the ingredients on one end of the nori sheet. You can then roll it up like a burrito, making sure to tightly wrap it to avoid spilling out the sides. If some ingredients fall out, don’t worry. Wet the very end strip of the nori sheet so that it can seal the roll. Wet your sharpened knife to cut the roll in as many pieces as you like. Make sure to wipe your knife between cutting rolls.

For the Cashew Cream

  • 2 c raw cashews
  • 2 tbsp. coconut aminos
  • 1 1/2 tbsp. raw tahini
  • 1 tsp. turmeric powder
  • 1/2 tsp. freshly grated ginger
  • 1/3 c filtered water

For the Nori Wraps

  • 10 raw nori sheets
  • mixed greens
  • 1 -2 avocados, pitted, peeled, and sliced
  • 1 mango, sliced
  • 1 cucumber, sliced
  • 1/2 yellow bell pepper, sliced


For the Cashew Cream

  1. Add all of the ingredients to a blender and blend until smooth.
  2. If you want the sauce to be thinner, add a little more water and blend until you reach your desired consistency.
  3. Set aside and prepare the nori wrap ingredients.

For the Nori Wraps

  1. Lay out a nori sheet and place a layer of mixed greens down. Drizzle some of the cashew cream over the greens.
  2. Layer a few more ingredients of your choice down, and then drizzle a touch more cashew cream.
  3. Finally, lay down the last layer of filling ingredients and roll up the nori into a tight wrap. Dab some water along the edge of the nori to seal it shut.
  4. Finish rolling up the nori wraps, cut them into pieces, and enjoy.
