This is an autumn dish if ever there was an autumn dish. Both pears and fennel are classic fall produce items and they are taking center stage in this recipe. No other ingredients will outshine this combo today! The ripe and refreshing pears offer a delicate sweetness that balances the assertive nature of the fennel. If you are familiar with fennel, you understand that it has a licorice-like or anise flavor. Because it is more intense in its raw form, you have to balance it out with inherently sweet ingredients.

For those who don’t know, fennel is rich in a variety of beneficial nutrients. It is an excellent source of vitamin C, beta-carotene, folate, potassium, fiber, and antioxidants like quercetin. For the Salad

  • 2 pears, cut into slivers
  • 2 medium fennel bulbs
  • 1/4 c pomegranate seeds
  • 2 tangerines, peeled, segmented and seeded

For the Dressing

  • 1 1/2 lemons, juiced
  • 1 pear, peeled and cored
  • 1/4 c extra virgin olive oil
  • 2 tbsp. raw apple cider vinegar
  • 2 tbsp. filtered water
  • 1/8 tsp. Chinese five spice powder
  • 1 tsp. sea salt
  • black pepper, to taste


For the Salad

  1. Add the thinly sliced pears to a large salad bowl. If you want, squeeze a little lemon juice over them and toss gently to avoid oxidation (turning brown).
  2. Add the remaining salad ingredients to the bowl and mix to combine.
  3. Set aside while you prepare the dressing.

For the Dressing

  1. Add all of the ingredients to a blender and blend until smooth.
  2. Taste the dressing and adjust seasonings as needed.
  3. Pour the dressing over the salad and toss to coat all of the salad ingredients.
