Raw Brussels Sprout Salad With An Avocado Dressing

This is a different yet tasty approach to eating Brussels sprouts, which are loaded with vitamin K, potassium, manganese, copper and B-complex vitamins. The potassium content is great for those with high blood pressure.

For the Salad

  • 1 lb Brussels sprouts, trimmed & thinly sliced
  • 1/2 c dried cranberries (without sulfur)
  • 2 tbsp. raw pumpkin seeds
  • 1/4 c raw pecans, chopped

For the Dressing

  • 1 avocado, mashed
  • 3 tbsp. extra-virgin olive oil
  • 2 tbsp. grade B maple syrup
  • 1/2 tsp. ground mustard seed
  • zest of 1 lemon
  • 1 1/2 tbsp. fresh lemon juice
  • 1/4 tsp. sea salt
  • Freshly ground black pepper, to taste


  1. Whisk together in a small mixing bowl the mashed avocado, maple syrup, lemon zest, lemon juice and mustard while gradually adding the olive oil, whisking to emulsify. Toss the dressing with the Brussels sprout leaves and
  2. season to taste with salt and pepper. Sprinkle in the dried cranberries, pumpkin seeds and diced pecans and gently toss. Serve chilled.
