Raw Kale Salad With A Simple Tahini Dressing

Let’s put the fact that kale is trendy aside for a second and just let this salad show us some delicious flavor combinations. You get the crunch of the cucumber, the creaminess of the avocado, the bite of the onion, and the zest from the citrusy tahini dressing that ties everything together.

For the Salad

  • 1 bunch kale, thick stems removed and chopped
  • 1 c cucumber, chopped
  • 1 medium avocado, pitted and diced
  • 1/2 c sweet onion, diced

For the Dressing

  • 3 tbsp. freshly squeezed lemon juice
  • 1/4 tsp. lemon zest
  • 2 tbsp. raw tahini
  • 2 tbsp. grade A maple syrup
  • 2 tsp. extra-virgin olive oil
  • 2 pinches cayenne pepper
  • pinch of sea salt
  • 2 pinches freshly ground black pepper


For the Salad

  1. After chopping the kale, rinse it and massage it so that you can soften it up.
  2. Add the chopped to a large salad bowl and pour in the cucumber, avocado, and onion. Set aside while you make the dressing.

For the Dressing

  1. Add all of the ingredients to a small bowl and whisk until smooth.
  2. Dress the salad in your desired amount of dressing and toss to coat all of the ingredients. Enjoy!
