Raw Shirazi Salad

Similar to an Israeli salad, Shirazi salad can be enjoyed on its own or as an accompaniment to a larger Mediterranean meal. If you love tomatoes and cucumbers, then this is the salad for you. The crisp bite of the Persian cucumbers share the stage with the powerful mint and parsley flavors. If you feel like adding some extra health fats, cut up and avocado and toss it in the mix.

  • 4 Persian cucumbers, chopped
  • 2 Roma tomatoes, diced
  • 1/2 small red onion, diced
  • 1 1/2 tbsp. parsley, chopped
  • 1 1/2 tbsp. mint, chopped
  • juice of 1 lemon
  • 1 tsp. extra virgin olive oil
  • 1 pinch sea salt
  • 1 pinch black pepper


  1. Add the cucumber, tomato, onion, mint, parsley, and mint to a medium-sized mixing bowl and toss to combine.
  2. Squeeze the lemon juice, drizzle the olive oil, and sprinkle the sea salt and pepper over the salad. Mix well to ensure that all the ingredients are dressed. Serve and enjoy!
