Give life to your salads when you dress them with this herbaceous dressing. It’s slightly sweet but mostly savory, and the acidity level is perfect. You even get a little bite from the chives. Additionally, it’s a wonderfully creamy dressing that is very similar to the classic Green Goddess Dressings you see in stores. The only difference is that this recipe is free of preservatives, added fats, and hydrogenated oils. In fact, there’s not even a drop of oil in this dressing!

Ingredients

  • 1 c raw cashews
  • 1/2 c water
  • 2 tbsp. freshly squeezed lemon juice
  • 1/4 c basil
  • 1/4 c chives
  • 1 tbsp. grade A maple syrup
  • 1/4 tsp. sea salt
  • pinch of black pepper

Instructions

  1. Add all of the ingredients to a blender and blend until smooth. Taste the dressings and adjust seasonings as needed.
  2. Pour the dressing into a glass jar and store it in the fridge. Please use the dressing within 3 days.
