Raw Vegan Chocolate Frosting

Although this dessert is more like a pudding, we are deeming it a frosting. The texture is somewhere between a frosting and a pudding, so please understand our dilemma. Should you want to eat it with a spoon, that is your decision and we can’t stop you. You can enjoy this chocolate frosting during your cleanse or after your cleanse. If you enjoy it during your cleanse, pair it with some fresh berries and bananas, or consider using it as a topping for raw vegan ice cream. If you enjoy it after your cleanse, you can put it on toast, in crepes, or even on cakes!

Normally, you would see the addition of raw agave nectar or grade A maple syrup in a recipe like this, but the dates offer intense sweetness. Dates also make the frosting a bit more spreadable. Now, should you want to make the blending process a little easier, you can soak the pitted dates in water for about one to two hours prior to blending. Drain the soaking water when ready to blend and then add the soaked dates and the remaining ingredients to the food processor. This will result in a smoother chocolate frosting, but you don’t have to do that step. Choose your destiny and enjoy this sweet treat!

Ingredients

  • 1/2 c dates, pitted
  • 2 tbsp. raw cacao powder
  • 1/4 c raw almond butter
  • 1/3 c filtered water

Instructions

  1. Add all of the ingredients to a food processor and blend until smooth.
  2. You may need to stop blending, scrape down the sides, and continue blending to make sure that everything is fully incorporated.
  3. Spoon out of the food processor and enjoy with raw fruit (strawberries are an excellent choice), or serve on top of your raw vegan ice cream.
