Ingredients
- 1 c Medjool dates, pitted, and roughly chopped
- 1/2 c raw walnuts
- 1/2 c raw almonds
- 1/2 c raw cacao powder (plus more for dusting)
- 1 tbsp. raw almond butter
- 1 tbsp. grade A maple syrup
- 2 tbsp. freshly squeezed orange juice
- Zest of 1 orange
- 3 tbsp. desiccated coconut
Instructions
- Add the dates, walnuts, and almonds to a food processor and process until you achieve a sandy texture. It should take about 30 seconds.
- Add the remaining ingredients to the food processor and blend until a dough-like ball forms. You may need to stop blending, scrape down the sides, and continue blending a couple times. This will ensure that all of your ingredients are combined.
- Wet your hands with cold water and start rolling the dough into tablespoon-sized balls.
- Dust each of the balls with raw cacao powder if you want to and then place them on a baking sheet lined with parchment paper.
- Place the energy balls in the freezer for about one hour and then remove to enjoy.
- Store them in an airtight container in the fridge for up to two weeks.
