Ingredients
For the Salad
- 2 yellow bell peppers, chopped
- 2 c cherry tomatoes, chopped
- 1/2 red onion, diced
- 2 scallions, thinly sliced
- 1 cucumber, chopped
- 1 avocado, peeled, pitted, and diced
- 1 head romaine lettuce, sliced
For the Dressing
- 1 avocado, peeled and pitted
- 1/2 c filtered water
- 2 tbsp. extra virgin olive oil
- 1 tbsp. freshly squeezed lime juice
- 1 tsp. chili powder
- 1/4 tsp. cumin
- sea salt and black pepper, to taste
Instructions
For the Salad
- In a large salad bowl, combine all of the chopped vegetables and toss gently to mix up.
- Alternatively, you can make your salad social media-worthy and have the romaine be the base layer. Portion each of the other ingredients in their own section on top of the lettuce bed. That is up to you, though.
- Set aside while you prepare the dressing.
For the Dressing
- Add all of the ingredients to a blender and blend until smooth.
- Taste the dressing and adjust seasonings as needed.
- Pour the dressing over the salad and toss well to combine. Make sure that all of the ingredients are coated and then serve and enjoy.
