Raw Vegan Curry With Marinated Mushrooms & Onions

This is probably one of the easiest curries you will ever make. You might be surprised at how these simple ingredients make elegant and complex flavor combinations.

Ingredients

For the Curry

  • 1/4 c raw cashews
  • 1 c water
  • 1 tsp. curry powder
  • 1/4 c onion, diced
  • Sea salt and pepper, to taste

For the Marinated Mushrooms & Onions

  • 1 1/2 c thinly sliced mushrooms
  • 1/4 c onion, diced
  • 1 tsp. freshly squeezed lemon juice
  • 1 tsp. coconut aminos
  • 1/2 tsp. ground coriander

Instructions

For the Curry

  1. Blend all of the curry ingredients in a blender until you get a smooth consistency. Season to taste.

For the Marinated Mushrooms & Onions

  1. In a medium bowl, toss the mushrooms and onions in the lemon juice, coconut aminos, and ground coriander. Let that marinate at room temperature for about one hour.
  2. Pour your curry in a bowl and add the mushrooms and onions. If you want, you can add some spinach and fresh cilantro, but this is optional.
