Raw Vegan Key Lime Pie Squares

Avocados have their place in desserts, people. The sooner you accept that, the more delicious your life will be. This dessert is 100% raw vegan and is 100% tangy, sweet, tart, and chewy all at once. It’s everything you want from a key lime pie made with healthy, all-natural ingredients.

Note: Your pie squares may appear more green than the squares in the image.

Raw Vegan Key Lime Pie Squares

For the Crust

  • 2 1/2 c raw almonds
  • 1/8 c coconut oil
  • 1/3 c dates, pitted and roughly chopped
  • 1 pinch sea salt

For the Filling

  • 2 avocados, peeled, pitted, and chopped
  • 1/2 c coconut oil
  • 1 c raw cashews (soaked in water for 4 hours and then drained)
  • 1/2 c raw agave syrup
  • 4 limes, zested and juiced
  • 1 pinch sea salt


For the Crust

  1. Add all of the ingredients to a food processor and blend until you get a coarse consistency. It will start to come together and resemble a dough-like texture.
  2. Grease an 8x8- or 9x13-inch baking dish with a little coconut oil and press the crust into a thin, even layer. Put it in the freezer while you make the filling.

For the Filling

  1. Add all of the ingredients to a blender and blend until smooth. The mixture should be thick and creamy like pudding.
  2. Remove the dish with the crust and spoon the filling on top of the crust. You can either refrigerate for two hours or place in the freezer for 45 minutes.
  3. Once it has set, remove from the freezer, slice into small squares, top with optional lime zest, and enjoy.
