A great product kelp noodle brand is Sea Tangle, which you can find at most grocery stores and various online retailers. All you have to do is soak them in water for a little bit so that they can soften. Dress them in the flavor-packed, creamy almond butter sauce and you’ll be in heaven.

Ingredients

For the Pad Thai

  • 1 bag of kelp noodles
  • 1 c button mushrooms, stems removed and thinly sliced
  • 1 c celery, thinly sliced
  • 1/2 c shredded carrots
  • 1/8 c scallions, chopped
  • 2 tbsp. cilantro, chopped

For the Sauce

  • 1/2 c raw almond butter
  • 1 c onion, roughly chopped
  • 1/4 c coconut aminos
  • Juice from one lime
  • 3 cloves of garlic
  • 2 tsp. red pepper flakes

Instructions

For the Pad Thai

  1. Remove the kelp noodles from the package and soak them in water for about 5-10 minutes.
  2. While the noodles are soaking, prepare the vegetables. Add them to a large mixing bowl and set aside.
  3. Drain the water from the noodles and add them to the bowl with veggies.

For the Sauce

  1. Add all of the ingredients to a blender or food processor and blend until smooth.
  2. Pour the dressing over the noodles and vegetables and toss to combine. Serve and enjoy.
