Raw Walnut “Meat” Tacos

For the Walnut Meat

  • 1 c walnuts
  • 2 tsp. liquid aminos
  • 2 tsp. water
  • 1 tsp. cumin
  • 1 tsp. cayenne pepper
  • 1 tsp. dried oregano
  • 1/2 tsp. dried chilli
  • sea salt and pepper to taste

For the Corn Salsa

  • 1 tomato, diced
  • 1/2 small red onion, finely chopped
  • kernels off one fresh corn cob
  • small handful chopped cilantro leaves
  • juice of 1/2 lime
  • 1/4 tsp paprika
  • sea salt and pepper to taste
  • Romaine lettuce leaves, to serve


  1. To make the walnut mixture, add all the ingredients to a blender or food processor and mix until combined and crumbly.
  2. To make the salsa, combine the onion, tomato, corn and coriander in a bowl, stir through lime juice and season with salt and pepper.
  3. To serve, place a few small scoops of salsa into one of the Romaine leaves, add a scoop of walnut mixture and enjoy :)
