The freshness of this Asian pear salad is filled with complex flavors and textures, so you’re in for a treat. If you’ve never tasted Asian pear, it has a similar texture to apples, but it is slightly tart. It is a great salad ingredient!

Asian Pear Salad with Orange Ginger Dressing

Ingredients

For the Salad

  • 1 c green cabbage, shredded
  • 1 c romaine lettuce, thinly sliced
  • 1 c shredded carrot
  • 2 c Asian pear, thinly sliced
  • 1/2 c mung bean sprouts
  • 1 c raw walnuts, roughly chopped

For the Dressing

  • 1 tsp. minced shallots
  • 1 tsp. orange zest
  • 1/4 c orange juice, freshly squeezed
  • 1 tsp. ginger root, peeled and grated
  • 2 tbsp. apple cider vinegar
  • 2 tsp. cilantro, finely chopped
  • 1/4 c avocado oil
  • freshly ground pepper, to taste
  • sea salt, to taste

Instructions

For the Salad

  1. Add all of the ingredients to a large salad bowl and mix well to combine. Set aside while you make the dressing.

For the Dressing

  1. Add all of the ingredients to a blender and blend until smooth.
  2. Pour your desired amount of dressing over the salad and toss to coat all the ingredients. Enjoy!
  3. If you end up with leftover dressing, store it in an airtight glass jar in the fridge for up 5 days.
