Refreshing Winter Fruit Salad

Melons and berries disappear from the grocery store during the winter, meaning that apples, citrus, and more apples are left. It’s a great practice to take what new seasons give you and incorporate those ingredients into your diet. In the case of this winter fruit salad, for example, you will use seasonal pomegranates, apples, mandarins, and kiwis.

A lot of people think that citrus fruits are the richest sources of vitamin C, but kiwis pack a more powerful vitamin C punch. For example, a regular kiwi contains twice as much vitamin C as the average clementine/mandarin. Pomegranates also contain vitamin C, but not as much as clementines. Plus, the fresh lime juice that you toss the ingredients in also offers vitamin C. All of this is to say that you need not worry about your vitamin C intake when you enjoy this refreshing fruit salad on a cold winter morning.

It seems odd to dress a fruit salad, but trust us when we tell you that it is a pro move. The sweetness of the agave and intense zest of the fresh lime juice accentuate the flavors in this fruit salad. Your taste buds may not know what to do with all the flavor! If you go out on a sunny winter day, this is the perfect dish to pack for a picnic as well.

Ingredients

  • 2 c apple, cored and cubed
  • 1 c kiwis, peeled, quartered and sliced
  • 2 c mandarin orange segments
  • 1/2 c pomegranate arils
  • 3 tbsp. freshly squeezed lime juice
  • 3 tbsp. raw agave nectar

Instructions

  1. Add all of the cut fruit into a large bowl and mix gently to combine.
  2. In a small bowl, whisk together the lime juice and agave nectar.
  3. Pour the lime dressing over the fruit and toss well to coat the ingredients.
  4. Serve and enjoy. Garnish with mint leaves if desired.
