Seasonal Pomegranate Kale Salad

When the fall and winter seasons give you delicious ingredients like pomegranates, kale, and citrus fruits, you embrace them and use them every which way you can. This salad is simple to make and packs a nutritional punch in every bite.

Ingredients

For the Salad

  • 1 c pomegranate seeds
  • 1 bunch kale, chopped and thick stems removed
  • 1 medium orange, sliced into segments
  • 1/4 c raw walnuts, roughly chopped

For the Dressing

  • 1/4 c extra virgin olive oil
  • 2 tbsp. freshly squeezed lemon juice
  • 2 tbsp. raw apple cider vinegar
  • 1/2 tsp. ground mustard seed
  • 1 clove garlic, minced
  • 1/2 tsp. dried oregano
  • 1/4 tsp. sea salt
  • 1/8 tsp. ground black pepper
  • 1 tsp. raw agave

Instructions

For the Salad

  1. Add all of the ingredients into a large salad bowl and toss to combine. Set aside while you make the dressing.

For the Dressing

  1. Pour all of the ingredients into a blender and blend until thoroughly combined. You can take a kale leaf and dip it into the blender to taste the dressing. Adjust seasoning if necessary.
  2. Drizzle your desired amount of dressing over the salad and toss to coat all of the ingredients. Any leftover dressing can be stored in a glass jar in the fridge for up to 5 days.
