Simple Shredded Carrot Salad

Let’s clarify something straight out of the gate. The word “simple” does not mean that something is bland or flavorless. In fact, simple dishes often pack the most flavor because they only use the essential ingredients. This salad, for example, is simple for two reasons: 1) It is so easy to make; 2) there are under 10 ingredients, including the dressing. The ingredients speak for themselves, and their simplicity is why the flavor combinations balance perfectly.

When you take a bite, you instantly taste the inherent sweetness of the carrots. A quick second later and you are experiencing an overload of herbaceous parsley and cilantro, adding a refreshing, light element to your eating experience. What ties everything together is the tart, acidic salad dressing. The rich, aromatic cumin is the perfect spice you never knew you wanted in this salad.

While this salad works as a great side dish, you may find that you want to enjoy it as an entree salad, especially if you are cleansing. We hope you enjoy it!

Simple Shredded Carrot Salad

For the Dressing

  • 1/2 c white onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp. extra virgin olive oil
  • 2 tbsp. raw apple cider vinegar
  • 1/4 tsp. ground cumin
  • sea salt and pepper, to taste

For the Salad

  • 1 lb carrots, peeled and grated
  • 2 tbsp. cilantro, chopped
  • 2 tbsp. flat leaf parsley, chopped


For the Dressing

  1. Add all of the ingredients to a blender and blend until smooth. Taste and adjust seasonings as needed.
  2. Set aside while you make the salad.

For the Salad

  1. Add all of the ingredients to a large salad bowl and toss gently to combine.
  2. Drizzle your desired amount of dressing over the salad, toss to coat all of the ingredients, and then serve.
