- 1 c fresh or frozen pineapple chunks (or one 8-ounce can crushed pineapple, in juice)
- 1 medium to large ripe banana
- 1/2 c coconut milk.
- 1/2 tsp. non-alcoholic coconut extract (found in the baking aisle).
- 1/2 teaspsoon of liquid vanilla stevia drops.
- 1/4 c of shredded coconut.
- Blend and serve with fresh pineapple, orange, or cherries for garnish. This drink is best served cold, but ice dilutes it, so try putting the ingredients in the fridge for a few hours before you make it. :-)
