Skinny Pineapple Coconut Smoothie



  • 1 c fresh or frozen pineapple chunks (or one 8-ounce can crushed pineapple, in juice)
  • 1 medium to large ripe banana
  • 1/2 c coconut milk.
  • 1/2 tsp. non-alcoholic coconut extract (found in the baking aisle).
  • 1/2 teaspsoon of liquid vanilla stevia drops.
  • 1/4 c of shredded coconut.


  1. Blend and serve with fresh pineapple, orange, or cherries for garnish. This drink is best served cold, but ice dilutes it, so try putting the ingredients in the fridge for a few hours before you make it. :-)
