Smoky & Spicy Vegan Lentil Tacos

Are you ready for tacos? The answer should always be “yes.” This recipe has minimal ingredients, so you’ll be done making tacos in no time. Use your favorite vegan toppings on these tacos to make them complete…or you can use our suggestions.

For the Tacos

  • 2 c cooked lentils
  • 2 tsp. olive oil
  • 1/2 c onion, diced
  • 2 garlic cloves, minced
  • 1/2 c bell peppers, diced
  • 1 tbsp. jalapeno, finely diced (optional)
  • 1/2 c grape tomatoes, halved
  • 1 tsp. chili powder
  • 1/2 tsp. cumin
  • 1/2 tsp. garlic powder
  • 1/2 tsp. smoked paprika
  • 8 six-inch corn tortillas (or you can use lettuce leaves for taco shells)

Optional Toppings

  • avocado slices
  • 2 tbsp. cilantro, diced
  • 1/4 c tomatos, diced


  1. Warm the olive oil in a frying pan over medium heat. Add the onions, garlic, and peppers to the pan and cook for about 3-5 minutes, stirring occasionally.
  2. When the onions are translucent, add the tomatoes, cooked lentils, and all the spices. Stir the mixture frequently while you cook it for another 5 minutes. Remove from the heat.
  3. Heat the tortillas on a dry pan over medium heat for about a minute on each side. Prepare your desired toppings.
  4. Assemble your tacos by adding about 1/4 cup of the lentil mixture into each tortilla. Add the toppings and enjoy!
