For this salad, the ingredients are quite simple, but the tropical flavors come to the forefront. The grapefruit offers a wonderful zest that complements the inherent sweetness of the mango. Spinach serves as the perfect base because it has a relatively neutral flavor. It goes great with most ingredients, especially the lime vinaigrette. - 1/8 c freshly squeezed lime juice
- 1/2 tsp. raw agave nectar
- pinch of sea salt and pepper

- 6 c baby spinach
- 1 large mango peeled, seeded, and segmented
- 1 grapefruit peeled and segmented
- 1 avocado peeled, pitted, and chopped
