Adding a little color to your salads is never a bad idea. In case you aren’t familiar with our “eat the rainbow” motto, you’re about to become well-acquainted. The more colorful produce items you eat, the more antioxidants you provide your body. That means more nourishment for your cells and a reduced risk of oxidative stress.

For this salad, the ingredients are quite simple, but the tropical flavors come to the forefront. The grapefruit offers a wonderful zest that complements the inherent sweetness of the mango. Spinach serves as the perfect base because it has a relatively neutral flavor. It goes great with most ingredients, especially the lime vinaigrette. In fact, the lime dressing brings out the natural flavors of all the ingredients. Lastly, both the lime juice and the apple cider vinegar work to promote better alkaline levels in the body.
