Strawberries and mint pair beautifully, and cucumbers and mint are classically combined in Mediterranean cuisine. This is a wonderful snack on a hot day, but it can also be a refreshing side salad to your entree.

Ingredients
For the Salad
- 8 oz strawberries, hulled and thinly sliced
- 1 English cucumber, seeds removed and thinly sliced
- 1/2 small red onion, thinly sliced
- 1/2 c fresh basil, thinly sliced
- 1/4 c fresh mint, thinly sliced
For the Dressing
- 2 tbsp. extra virgin olive oil
- 1 tbsp. raw apple cider vinegar
- pinch of sea salt
- pinch of black pepper
Instructions
For the Salad
- Combine all of the ingredients in a large salad bowl and gently toss. Set a side while you make the dressing.
For the Dressing
- In a small bowl, whisk all of the ingredients together. Taste and adjust seasonings as needed.
- Pour the dressing over the salad and toss to ensure all the ingredients are equally dressed. Serve and enjoy.
