Strawberry Cucumber Mint Salad

Berries are wonderfully tart and sweet, but they are underutilized salad ingredients. It’s time that you stepped out of your comfort zone! Strawberries and mint pair beautifully, and cucumbers and mint are classically combined in Mediterranean cuisine. This is a wonderful snack on a hot day, but it can also be a refreshing side salad to your entree.

Strawberry Cucumber Mint Salad

Ingredients

For the Salad

  • 8 oz strawberries, hulled and thinly sliced
  • 1 English cucumber, seeds removed and thinly sliced
  • 1/2 small red onion, thinly sliced
  • 1/2 c fresh basil, thinly sliced
  • 1/4 c fresh mint, thinly sliced

For the Dressing

  • 2 tbsp. extra virgin olive oil
  • 1 tbsp. raw apple cider vinegar
  • pinch of sea salt
  • pinch of black pepper

Instructions

For the Salad

  1. Combine all of the ingredients in a large salad bowl and gently toss. Set a side while you make the dressing.

For the Dressing

  1. In a small bowl, whisk all of the ingredients together. Taste and adjust seasonings as needed.
  2. Pour the dressing over the salad and toss to ensure all the ingredients are equally dressed. Serve and enjoy.
