Strawberry Spinach And Avocado Salad

It is important to keep an open mind when it comes to salads. Some refuse to use certain ingredients, but odd pairings can often come together to create vibrant, harmonious flavors. This salad is easy to make and contains an assortment of nutrients, including iron, magnesium, protein, omega-3 fatty acids, and more.

For the Salad

  • 1/2 c raw pine nuts or walnuts (whatever is easier to get)
  • 2 c spinach leaves
  • 1 c fresh strawberries, quartered
  • 1 avocado, peeled, pitted, and cubed
  • 1/4 c red onion, chopped

For the Dressing

  • 1/2 c extra virgin olive oil
  • 1 tbsp. raw apple cider vinegar
  • 1 tbsp. freshly squeezed orange juice
  • 2 tbsp. water
  • 3 ripe strawberries
  • 3 fresh basil leaves
  • 1/8 tsp. sea salt


For the Salad

  1. Add all of the ingredients to a bowl and toss to combine. Set aside while you make the dressing.

For the d

  1. Add all of the ingredients to a blender and pulse until you get a smooth consistency. Drizzle your desired amount over your salad and toss to coat all the ingredients in the dressing.
  2. Store leftover dressing in an airtight glass jar in the fridge for up to one week.
