Ingredients
For the Dressing
- 1 tbsp. grapeseed oil
- 1 tbsp. freshly squeezed lemon juice
- 1/2 tsp. agave
- Pinch of sea salt
For the Salad
- 4 c arugula
- 3 ripe peaches, cut into slivers
- 1/8 c fresh basil leaves
- 1 tbsp. hemp seeds
- 1/2 c raw pistachios, roughly chopped
Instructions
For the Dressing
- Whisk all of the ingredients together in a small bowl and taste to see if you need to adjust the seasonings.
- Set the dressing aside while you prepare the salad.
For the Salad
- Add all of the ingredients to a large mixing bowl and toss gently to combine.
- Pour the dressing over the salad and toss to coat the ingredients. Serve and enjoy.
