Traditionally known as som tum, green papaya salad is a sweet and spicy dish in Thailand. This is typically made as a side dish, but you can eat it as your full meal if you are cleansing. It packs some heat, but you can always use fewer chiles to make it milder.

Ingredients
For the Salad
- 2 c firm green papaya, peeled first and then grated
- 1/4 c green beans, chopped
- 1/4 c carrots, grated
- 1/4 c cabbage, thinly sliced
- 10 cherry tomatoes, halved
For the Dressing
- 2 tbsp. coconut aminos
- 2 cloves garlic, minced
- 1 or 2 small Thai green or red chilis, minced
- 1 tsp. lemon or lime juice
- 1 tsp. raw agave
- 1/4 tsp. sea salt
Optional Toppings
- raw cashews, chopped
- lettuce leaves
Instructions
- Toss the salad ingredients together in a large bowl and set aside.
- Traditionally, you mash the garlic and chilis in a mortar and pestle and then you add the lime juice. You can do this first and then add the mixture to a blender with all of the other dressing ingredients. If you don't use a mortar and pestle, you can just add all of the ingredients to a blender and blend until you get a smooth consistency.
- Dress the papaya salad with the dressing and mix well. Enjoy!
