If you are making our raw tacos and are craving some sour cream, you need this recipe in your life. You won’t believe how creamy and refreshing it is. You can even add a little jalapeño for an extra kick!

- 1 c raw cashews, soaked overnight
- 1/4 c + 2 Tbsp fresh lemon juice
- 1/4 tsp. sea salt
- 1 tsp. nutritional yeast
- 1/2 c filtered water
- Discard the soaking water from the cashews. Add the cashews and the rest of the ingredients to a blender or food processor. Blend on high for about 5-7 minutes, or until you get a smooth and creamy consistency.
- Transfer to a glass jar with a sealable lid. This will keep in the fridge for about 1-2 weeks.
