Ingredients
For the Salad
- 1 cucumber, diced
- 2 c tomatoes, diced
- 1/2 red onion, diced
- 3 green onions, thinly sliced
- 2 tbsp. basil leaves, thinly sliced
For the Dressing
- 3 tbsp. apple cider vinegar
- 3 tbsp. olive oil
- 1/4 tsp. sea salt
- 1/4 tsp. black pepper
Instructions
- Add all of the ingredients to a medium-sized bowl and toss gently to combine.
- Set aside while you prepare the dressing.
- In a small bowl, whisk the ingredients together and taste to adjust seasonings if necessary.
- Pour the dressing over the salad and toss to coat the ingredients. Enjoy.
