Nectarines are a great summer fruit, offering an assortment of vitamins, minerals, and antioxidants. Vegan Spinach & Nectarine Salad

For the Salad

  • 5 c spinach
  • 2 nectarines, pitted and thinly sliced
  • 1/2 c walnuts, chopped
  • 1/2 c vegan feta cheese

For the Dressing

  • 1/4 c fresh basil leaves
  • 2 tbsp. balsamic vinegar
  • 3 tsp. maple syrup
  • 1/4 tsp. sea salt
  • 1/4 tsp. black pepper
  • 6 tbsp. extra virgin olive oil


For the Salad

  1. Add all of the ingredients to a large salad bowl and toss gently to combine.
  2. Set aside while you prepare the dressing.

For the Dressing

  1. Add all of the ingredients, except for the olive oil, to a blender and blend to combine.
  2. With the blender on low, open the top of the blender, drizzle the olive oil in, secure the top again, and then blend until smooth.
  3. Pour the dressing over the salad and toss to coat all of the ingredients. Serve and enjoy.
