Walnut Meat Tacos That Are Keto-Friendly

Using raw walnuts as the base for the “meat,” these tacos are absolutely filling, tasty, and they somehow get better with each bite. It seems like a difficult recipe, but it is actually very easy. Honestly, the hardest part of this recipe is not tearing the cabbage leaves when you peel them off the cabbage head. Good luck with that!

Ingredients

For the Walnut Meat

  • 1 c raw walnuts
  • 1 tbsp. olive oil
  • 1 tbsp. coconut aminos
  • 1 tsp. dried oregano
  • 1 tsp. cumin
  • 1/2 tsp. chili powder
  • 1/4 tsp. sea salt
  • 1/8 tsp. cayenne

For the Tacos

  • 6 cabbage leaves
  • 1 avocado, pitted, peeled and thinly sliced
  • 1 Roma tomato, diced

Instructions

For the Walnut Meat

  1. Add all of the ingredients to a food processor and blend until it looks like the consistency of ground beef.
  2. Spoon the walnut meat into a bowl and set aside.

For the Tacos

  1. Prepare the cabbage leaves on a plate and spoon some of the walnut meat into each leaf.
  2. Place a couple slices of avocado and some diced tomatoes in each cabbage leaf. Serve and enjoy!
