Ingredients
- 1 red apple, cored and chopped
- 1 Granny Smith apple, cored and chopped
- 2 mandarins, peeled and segmented
- 1 medium pear, cored and chopped
- 1/2 c pomegranate arils
- 2 kiwis, peeled and sliced
- 2 tbsp. raw agave nectar
- 2 tbsp. freshly squeezed lime juice
- 1 tsp. lime zest
- 2 tbsp. mint leaves, roughly chopped
Instructions
- Gently toss the apples mandarins, pear, kiwi, and pomegranate arils in a large bowl and set aside.
- In a small bowl, whisk together the agave nectar, lime juice, and lime zest. Pour this dressing over the fruit and toss gently to combine.
- Refrigerate for at least 30 minutes to allow the flavors to intensify. Remove from the fridge and top with chopped mint leaves.
