For this reason, we recommend that you get spiralizer that has “feet” to remain stable on the counter. It’s very easy to use and is effective for numerous ingredients, including zucchini, carrots, sweet potatoes, and butternut squash. If you don’t want to purchase a spiralizer, you can turn zucchini into flat noodles by using a peeler. There is no wrong way to turn a zucchini into noodles; rather, the spiralizer just makes the process easier.

Zucchini noodles would not be enjoyable without an incredible sauce. Because they don’t exhibit a strong flavor profile, they can easily take on the flavors of whatever you toss them in. To make the sauce, simply add all of the ingredients to a high-speed blender and blend until smooth. You can leave the blender running for a minute or two, or longer, so that the high revolutions naturally warm up the sauce. That’s a little raw vegan hack for all of our cleansers! After making the sauce, toss the zucchini noodles in it, plate, and enjoy!

Ingredients

For the Sauce

  • 2 Roma tomatoes, chopped
  • 1/2 c sun-dried tomatoes (not in oil)
  • 1 garlic clove, minced
  • 1/4 c basil leaves
  • Pinch cinnamon
  • 1 tbsp. cilantro, chopped
  • 4 dates, pitted
  • 1 tsp. sea salt
  • 1 tbsp. olive oil

For the Zucchini Noodles

  • 2 zucchini
  • 1 c cherry tomatoes, halved

Instructions

For the Sauce

  1. Add all of the ingredients to a high-speed blender and blend until smooth.
  2. It will take about 30 seconds to fully blend all of the ingredients, but you can leave the blender running for a couple minutes to naturally warm up the sauce.
  3. Set aside while you prepare the zucchini noodles.

For the Zucchini Noodles

  1. Spiralize the zucchini and pat dry with paper towels. Add the zucchini noodles to a large bowl with the halved cherry tomatoes.
  2. Pour the sauce over the zucchini noodles and toss to coat. Serve in separate bowls and enjoy. Top with optional basil leaves.
