  • 1 c raw walnuts
  • 1/2 c sun-dried tomatoes (not in oil)
  • 1/3 c basil
  • 3 garlic cloves, minced
  • 1/2 tsp. dried oregano
  • 1/4 tsp. dried rosemary
  • 1/4 tsp. dried thyme
  • 1/8 tsp. sea salt
  • 1 –2 tsp. olive oil
  • 2 zucchini, spiralized


  1. Add all of the ingredients, except the zucchini, to a food processor and blend until you achieve a smooth consistency.
  2. Taste and adjust the seasonings as needed. You can add a touch more olive oil if the pesto is too thick.
