Zucchini Noodles In A Cheesy Raw Avocado Sauce

For the Avocado Sauce

  • 1 ripe avocado, peeled and pitted
  • 1/2 c basil leaves
  • 1 tbsp. raw tahini
  • 1 tbsp. onion powder
  • juice of 1 lemon
  • 1 tbsp. nutritional yeast
  • 1 tsp. turmeric powder
  • 1 tsp. dried oregano
  • pinch of sea salt
  • pinch of black pepper

For the Zoodles

  • 1 zucchini, spiralized
  • 1 bunch, chopped and thick stems removed

For the Raw Vegan Parmesan

  • 1/2 c raw almonds
  • 2 tbps nutritional yeast
  • 1 tsp. garlic powder
  • sea salt, to taste


For the Avocado Sauce

  1. Add all of the ingredients to a blender and blend until smooth and creamy.
  2. Taste and adjust seasonings as needed. Set aside while you prepare the zoodles and the parmesan.

For the Zoodles

  1. Place the zucchini noodles and kale into a large bowl and toss gently to combine.
  2. Pour the sauce over the zoodles and kale and then toss to ensure all the ingredients are generously coated. Set aside while you prepare the raw vegan parmesan.

For the Raw Vegan Parmesan

  1. Add all of the ingredient to a food processor and pulse a few times.
  2. You do not want to pulse too long, as the the mixture should resemble crumbled parmesan cheese, not a nut butter.
  3. Serve the zoodles into two separate bowls and then sprinkle the parmesan over each bowl. Enjoy!
