If you look at the ingredient label on a pint or quart of ice cream, you will notice a long list of ingredients, with sugar being high on the list. When life gives you apricots, you make apricot sorbet, because you sure can’t make lemonade out of apricots! Apricots have a slightly tart and sweet flavor profile, but every now and again, you can come across a batch with subpar flavor. Sure, you could dehydrate that batch to make dried apricots, or you could turn the apricots into a magnificent sorbet. We did exactly that because making sorbet is very simple and requires almost none of your time. You simply blend the ingredients together, add them to a freezer-safe container, freezer until firm, and then scoop to enjoy.

From start to finish, this sorbet takes about 10 minutes to prep and blend. Make it a little after lunch and it’ll be ready to enjoy by the time you finish eating dinner. Even though the sorbet is sweetened with maple syrup, it is not overly sweet. The fresh lemon juice brings a zesty acidity, so the sorbet is not overly sweet. It is beautifully creamy and smooth, so make it now while apricots are in season. Get them before they leave supermarket shelves!

Because the lime juice and zest bring a tangy acidity and the chili brings spice, we added a touch of maple syrup. You can start with a little less maple syrup and increase the amount from there.

In order to create a more pleasant eating experience, make sure that you blend everything until smooth and creamy. You don’t want any frozen mango chunks in the sorbet! Using a high-speed blender is a possibility, but you may have an easier time creating a smooth and creamy consistency. Whichever kitchen appliance you use to make the sorbet, make sure that you scrape down the sides of the processor/blender to fully incorporate all the ingredients. When ready to serve, feel free to dust with some chili powder or add a squeeze of lime.

The primary flavonoids in apricots are catechins, chlorogenic acids, and quercetin. Working to neutralize free radicals and oxidative stress, these flavonoids may help reduce the risk of chronic illnesses and obesity. Do not peel your apricots because the peel boasts large quantities of fiber and other nutrients. Just make sure that you discard the pit (a.k.a. the stone), as that is inedible.

The best way to ensure that this sorbet has a great texture is to freeze the apricots ahead of blending them with the other ingredients. These raw vegan fudge pops are similar to a chocolate avocado smoothie or pudding, in that the avocado is completely undetectable. The last thing you want to do is use unripe avocados to make these fudge pops. Not only will your pops not be creamy, but they will also have a slightly bitter flavor, which you do not want from a dessert. Make sure your avocados are ripe and quite soft to the touch, but you don’t want them overripe either. Blend the avocados with the rest of the ingredients until completely smooth. Once the mixture is smooth, you can poor it into the popsicle mold. Cover the mold with the lid and insert the popsicle sticks, or you can use the sticks that come with the mold if you have that type of mold.

If you are not the biggest avocado fan and want to start eating more of them, this is a great entry point because you cannot taste it. Rich in omega-3 fatty acids, avocados work to benefit heart health by lowering LDL (bad) cholesterol, triglycerides, and blood pressure. They also contain a variety of B vitamins, including thiamine (B1), riboflavin (B2), and niacin (B3), all of which help the body convert food into energy. Niacin, specifically, can fight inflammation and protect arterial health by improving triglyceride and cholesterol levels.
