You will have to stop blending, scrape down the sides of the processor bowl, and continue blending to ensure all of the cashews blend evenly. One thing to keep in mind about this highly addictive cashew butter is that it does come with a small price. It is naturally rich in calories and fats, even though they are healthy fats. This raw vegan ricotta is a cashew lover’s dream. Made with rich and creamy cashews, this vegan cheese makes for the perfect spread or topping for a raw zoodle entree. Have a cashew allergy or just dislike them? You can replace them with raw almonds, but make sure to use slivered almonds, as whole almonds don’t yield as creamy a consistency. Cashews are commonly used to make vegan and raw vegan cheeses, which is why we decided to use them. Just make sure to soak them for an hour or two prior to blending. That will soften them and allow for easier blending.

For this recipe, we highly recommend using a food processor, as a blender may not be able to do the job effectively. Because this is ricotta cheese, you want the blended mixture to retain some texture. For this reason, keep an eye on the ingredients during while you blend them. If you end up with a super creamy spread, don’t think that you have wasted ingredients. You can still enjoy the spread, which will be more of a creamy sauce. Ricotta cheese tends to have some curds, giving it a lumpy texture. To get a similar texture with cashews, blend for 30 seconds at a time. Scrape down the sides of the processor each time and repeat until you achieve a texture that appeases you.

Finally, if you feel the need to add a little pizzazz to this cashew ricotta, you can do so with the following measurements:

  • Fresh chopped herbs: Add 1/3 cup of cilantro, dill, or basil
  • Pepper: Add one teaspoon of crushed red pepper flakes for spice
  • Fresh chopped garlic: Add one or two cloves of minced garlic

The antioxidants in kale include quercetin and kaempferol, both of which are present in large amounts in kale. According to test-tube and animal studies, these compounds work to support heart health, reduce inflammation, slow the growth of cancer cells, and protect against chronic diseases.

What separates these kale chips from the next batch is that you dehydrate them after covering them in a creamy cashew cheese sauce. Because of that, the kale takes a lot longer to get crispy. You will need about 12 hours of dehydration in order to yield a crispy, cheesy kale chip. Before you sauce the kale in cashew cheese sauce, make sure to massage it with sea salt and lemon juice. Once the leaves are coated, you can toss them in the cashew sauce before placing them on dehydrator sheets. Don’t overlap the kale pieces or else they won’t get crispy.

Oh, this salad is oh, so flavorful. It’s got everything you want from a recipe: spice, zest, acid, sweet, tang, and more in every bite. Besides the impressive and refreshing flavors, this salad offers a variety of colors and textures. That makes for a more enjoyable eating experience with the added benefit of getting the various antioxidant compounds from the different-colored ingredients. Don’t let the recipe make you think that this is difficult to make, either. It comes together in a matter of 10-15 minutes and truly showcases the flavor of mango.

Traditionally, Thai mango salad is made with green mango, which is shredded or thinly sliced and mixed with red onion, cilantro, peanuts, fish sauce, and lime juice. The green mango, which is unripe, takes a similar role to green papaya, which is also unripe. Green mangos have a firm, crunchy texture and are quite tart. That’s why they are common in chutneys or pickles. Because green mangos are not as readily available in your average grocery store, we elected to use ripe mangos, which offer a juicy sweetness that complements the kick and punch of the other ingredients. Additionally, we replace the peanuts with raw cashews and, for obvious reasons, we omitted the fish sauce.

We always support culinary creativity at all times. If you feel that you have a cleanse-approved ingredient that would work well with the ones in this salad, feel free to add it in. What we do encourage is that you maintain somewhat uniform cuts for the ingredients. Slice the cucumbers and mangos thinly and on a diagonal so that they can be similar to the thinly sliced onions. Lastly, we only included red pepper flakes, not Thai chilies, because we care about not burning your taste buds off!

Welcome to yet another simple, no-bake energy ball recipe. These beautiful blueberry bliss balls (say that five times fast) are about to be your new favorite snack, especially if you’ve been looking for something to fuel your lethargic afternoons. That would most likely be impossible due to the massive amount of calories.

If you have never had dates, just know that they provide natural sweetness with a flavor that is reminiscent of caramel. In fact, you can actually blend dates with a little water to make a date caramel, which is a great alternative to traditional caramel. If you are interested in that recipe, click here. Dates are necessary in this recipe for two reasons: providing sweetness and helping bind the other ingredients together. Just make sure that you pit the dates prior to blending them with the other ingredients. Another step that can help is if you soak the pitted dates in warm water to help soften them before blending.

One thing to note is that this recipe is that it does not use fresh blueberries. You will need to procure dried blueberries, but make sure that they are free of added sugars and processed ingredients, such as sulfur dioxide. If you cannot find dried blueberries, you can choose another variety of dried fruit, such as dried apricots. The main thing to remember is that you do not want to have added sugars in whichever dried fruit you decide to use. And finally, if you do not like raw cashews, choose another nut, such as raw almonds, walnuts, pecans, pistachios, or hazelnuts.
