These raw vegan fudge pops are similar to a chocolate avocado smoothie or pudding, in that the avocado is completely undetectable. It flies under the radar of your taste buds and all you taste is chocolatey deliciousness. They are easy to whip up and magical once frozen. The last thing you want to do is use unripe avocados to make these fudge pops. Not only will your pops not be creamy, but they will also have a slightly bitter flavor, which you do not want from a dessert. Make sure your avocados are ripe and quite soft to the touch, but you don’t want them overripe either. Blend the avocados with the rest of the ingredients until completely smooth. Once the mixture is smooth, you can poor it into the popsicle mold. Cover the mold with the lid and insert the popsicle sticks, or you can use the sticks that come with the mold if you have that type of mold.

If you are not the biggest avocado fan and want to start eating more of them, this is a great entry point because you cannot taste it. If you want to pack a lot of fruits and vegetables into one meal, make a smoothie. If you want to fill up on an assortment of valuable nutrients, make a smoothie. Most smoothies use banana as the base with the intension of creating a creamy texture with natural sweetness. This smoothie includes a frozen banana, but it also incorporates avocado, which contributes to the creaminess. Ideally, freeze both the banana and avocado overnight. Make sure to peel and slice the banana and avocado prior to freezing. If you freeze both of these ingredients with the peels on, you will regret it. If you already have some frozen banana or frozen avocado on hand, feel free to include that in the smoothie. You may already have packaged frozen avocado or banana, which you can use as long as there are no added ingredients.

If you are all about the chocolate life, you may want to consider making your own raw vegan chocolate almond milk or cashew milk. The way to do this is very similar to a traditional nut milk recipe, only you whisk in raw cacao powder until smooth. Because raw cacao powder has a bitter taste, you may need to add some extra grade A maple syrup or raw agave nectar to your homemade chocolate milk. If that sounds like a few too many steps, feel free to just add raw cacao powder to the smoothie with the homemade almond milk. Don’t have the energy to make almond milk? Use water instead!

The flavor may change slightly because of the maple syrup, but it will not alter the texture of the mousse. As long as you blend the ingredients thoroughly, the mousse will have a creamy texture. If you want to really get fancy with it, feel free to bust out an electric hand mixer and whip the blended mixture.

A quick word about avocados: they contain a wide variety of nutrients and may help prevent bone loss, improve heart health, and boost digestion. They provide a substantial amount of monounsaturated fatty acids, which can help you feel fuller between meals. Eating healthy fats can help slow the breakdown of carbohydrates, which helps regulate blood sugar levels.

Additionally, you can sub out the bell pepper for diced mango or strawberry if you want to add a tropical element to this salad.

If you are familiar with our recipes, you know that we love chocolate avocado pudding. It is a wonderfully healthy and filling dessert or snack that provides lots of healthy fats, vitamins, minerals, antioxidants, and more. With this recipe, we’ve basically taken our beloved chocolate avocado pudding and transformed it into decadent truffles. Should you feel so inclined, you can elevate these truffles by rolling them in pulsed raw pistachios. Alternatively, you can dust the truffles with raw cacao powder or desiccated coconut flakes. 

Unlike other energy balls or truffles, you’ll have to place the blended mixture in the freezer prior to forming the mixture into balls. The reason for this is because the avocados make it very creamy. It becomes difficult to form truffles easily if the mixture is room temperature. Once you form the truffles, place them in the freezer or fridge to harden a little more. Enjoying them cold is the only way! 

Although these chocolate avocado truffles may not have the sugar content of a gingerbread house, they offer pleasant sweetness. The texture is very similar to chocolate ganache, making them very creamy and dreamy. That is why we recommended rolling them in pulsed pistachios if you enjoy a little texture. Make no mistake about it, though, these truffles are delicious as is and we hope you like them as much as we do.

Even though you can enjoy this chia pudding for breakfast, dessert, or a pre- or post-workout snack, it doesn’t taste like guacamole, despite how it looks. This luxurious, creamy pudding has just the right amount of sweetness, thanks to the grade A maple syrup. Should you want to elevate this recipe even more, you can add a dash of alcohol-free vanilla extract and a half of a banana. You do not have to add anything else to the recipe, although we do recommend serving the chia pudding with freshly sliced bananas or fresh berries.

When it comes to preparing this chia pudding, you can go about it a couple different ways. If you decide to make it sans machines, you will have to thoroughly mash the avocado before you mix in the other ingredients by hand. For an easier time, follow the directions (below) and use a blender. If you would rather use an immersion blender because it is your fun new kitchen toy, then go for it! The only suggestion we have for all preparation methods is to fold in the chia seeds by hand, as opposed to blending them.
