It is a gift to be able to make your own nut milk because you know exactly which ingredients go into it. Besides the fact that they do not contain any emulsifiers, thickening agents, or added sugars, homemade nut milks simply taste better than anything store bought. They taste fresher and are usually creamier. Because they are homemade and do not contain preservatives, they have a much shorter shelf life. Homemade nut milk, such as this strawberry cashew milk, has a shelf life of about three days, so be sure to drink it all up.

Carrageenan is probably the most common ingredient that you’ll see in a store bought nut milk. It’s a potentially carcinogenic ingredient that you should avoid if you can. Even “clean” nut milk companies will uses ingredients like carrageenan, which doesn’t instill confidence in buyers. A great nut milk should consist of a few ingredients: nuts, water, and a sweetener, such as raw agave nectar, grade A maple syrup, or dates.

For this homemade strawberry cashew milk, there is no sweetener; rather, the strawberries serve as the sweetening component. Choose your strawberries right and you’ll have a perfectly balanced sweet and slightly tart flavor. Now, you can make this strawberry cashew milk in one of two ways. Either you add all of the ingredients to a blender and then strain through a mesh sieve or nut milk bag, or you juice the strawberries and then mix that juice with the strained cashew milk. When you have a dehydrator, or an air fryer, toaster, dehydrator combo gadget, it’s hard not to experiment with different foods. For example, you can dehydrate thin strips of marinated eggplant to transform them into raw vegan bacon. You can dehydrate thin pear or apple slices and sprinkle them with cinnamon to make pear or apple chips.

In the case of this recipe, you thinly slice Brussels sprouts and place them in the dehydrator to transform them into chips. This is a great way to use Brussels sprouts, especially if you bought a two-pound bag and don’t know how to use all of them before they go bad. Thinly slicing and dehydrating the Brussels isn’t exactly exciting, especially for your taste buds. That’s why we dressed them in a blended sauce made from grade A maple syrup, cashews, coconut aminos, lemon juice, and sea salt and pepper.

The blended dressing, although not quite cheesy, takes these Brussels sprouts chips to another dimension of flavor. The dressing crisps up during the dehydration process, which can take a long time, so make sure you start the process at night or in the morning. It will most likely take about 16-20 hours, but you can check them earlier to see if they are nice and crispy.

Although the recipe only calls for three ingredients, you have the freedom to add more if you want to enhance or customize the flavor. Include grade A maple syrup, vanilla extract, a pinch of sea salt, raisins, or even cocoa powder. The core recipe only calls for short grain rice, oat milk, and a cinnamon stick, which you can replace with some cardamom pods, depending on your flavor preference. If you want to live a little dangerously, go ahead and create a cinnamon/coconut sugar mixture to roll the snickerdoodle bites in after making them. In order to do this step, freeze the bites for 30 minutes after making them. Remove them from the freezer and then roll them in the cinnamon sugar mixture. Place them back in the freezer for another 30 minutes and then remove from the freezer to enjoy. If you store them in an airtight container in the fridge, they will keep for two to three weeks. Store them the same way in the freezer for two months!

Ahhhh, the raw vegan moment you’ve been waiting for: jam that doesn’t require cooking and is free of added sugars. You just need a mixture of fresh berries, a jar for mashing, chia seeds, and grade A maple syrup. The chia seeds bloom in the mashed berries and maple syrup, thickening the creation to yield a spreadable jam. Much like chia pudding, this jam takes some time to fully set. Ideally, prepare it in the evening and refrigerate overnight so that it is ready in the morning.

This jam contains three types of berries: raspberries, blackberries, and blueberries. No strawberries are involved in the creation of this jam because, quite frankly, strawberries get enough love. That’s not why, people! We love strawberries just as much as the next person, but sometimes you need to showcase other berries. Blueberries, blackberries, and raspberries are all excellent sources of vitamin and other antioxidants. These berries are also low in sugar, making them great to enjoy if you follow the ketogenic diet.

Although you wouldn’t have a flavorful jam without the berries, the jam wouldn’t be jammy without the chia seeds. You need these seeds, which bloom in the presence of liquid to create a thick consistency that is similar to jarred jams you know and love. Plus, chia seeds are excellent sources of fiber, omega-3 fatty acids, protein, magnesium, and other impressive vitamins and minerals. Use this mixed berry jam as a condiment on raw ice cream or serve it with fresh fruit. After you finish cleansing, spread it on toast!

This cranberry vinaigrette has a slightly grainy texture, due to the blending of fresh ingredients. If you prefer a dressing with a less grainy consistency, you can pour this dressing through a fine mesh sieve or strainer to strain some of the pulp. That extra step will yield a smoother dressing, but this is based on preference. This vinaigrette is truly great on everything, but it complements bolder leafy greens like kale, arugula, red leaf lettuce, and butter lettuce.

Mustard powder can be an intense flavor, so don’t exceed the measurement. It offers a little tang that pairs nicely with the lemon, and you get a little sweet relief form the maple syrup. After you whisk together the ingredients or shake them up in a jar, you may or may not want to add a little water to thin it out. If you prefer thicker dressings, then you won’t have to add water at all. In fact, you can keep the dressing a little thicker and use it as a creamy dip for celery sticks or sweet potato fries.

It also contains coffee, whipped cream, and pumpkin spice topping. Although an occasional pumpkin spice latte from Starbucks won’t kill you, drinking one every day can be a problem.

This homemade pumpkin spice latte is made with real pumpkin, naturally sweetened with maple syrup, and made creamy with cashews. You can’t have a pumpkin spice latte without pumpkin spice, though.
