If you look at the ingredient label on a pint or quart of ice cream, you will notice a long list of ingredients, with sugar being high on the list. When life gives you apricots, you make apricot sorbet, because you sure can’t make lemonade out of apricots! Apricots have a slightly tart and sweet flavor profile, but every now and again, you can come across a batch with subpar flavor. Sure, you could dehydrate that batch to make dried apricots, or you could turn the apricots into a magnificent sorbet. We did exactly that because making sorbet is very simple and requires almost none of your time. You simply blend the ingredients together, add them to a freezer-safe container, freezer until firm, and then scoop to enjoy.

From start to finish, this sorbet takes about 10 minutes to prep and blend. Make it a little after lunch and it’ll be ready to enjoy by the time you finish eating dinner. Even though the sorbet is sweetened with maple syrup, it is not overly sweet. The fresh lemon juice brings a zesty acidity, so the sorbet is not overly sweet. It is beautifully creamy and smooth, so make it now while apricots are in season. Get them before they leave supermarket shelves!

Apricots are stone fruits that are in season during summer. They are low in calories and have a diverse nutritional profile. They contain vitamins, A, C & E, potassium, fiber, and powerful carotenoids, including zeaxanthin, beta-carotene, and lutein. Apricots also other flavonoids that may help the body fight off illnesses, including type 2 diabetes and heart disease. The primary flavonoids in apricots are catechins, chlorogenic acids, and quercetin. Working to neutralize free radicals and oxidative stress, these flavonoids may help reduce the risk of chronic illnesses and obesity. Do not peel your apricots because the peel boasts large quantities of fiber and other nutrients. Just make sure that you discard the pit (a.k.a. the stone), as that is inedible.

The best way to ensure that this sorbet has a great texture is to freeze the apricots ahead of blending them with the other ingredients. Just make sure to separate the slices to avoid them freezing in giant clumps. You can do this by laying them flat on a parchment paper-lined plate or baking tray. If you don’t have access to fresh blackberries, feel free to use frozen blackberries, so long as they are free of added sugars and preservatives. We just recommend that you thaw them prior to blending with the other ingredients.

One ingredient that will catch your palate by surprise is the freshly grated ginger. It’s a little kick that beautifully complements the sweet and tart blackberries. If you have an aversion to ginger, for some strange reason, feel free to omit it from the recipe. It is highly beneficial for the body, though, offering lots of antioxidant, anti-inflammatory, and antibacterial properties. All of those active compounds work to enhance immune function, but the blackberries also contain beneficial antioxidants that aid immunity. The choice is yours, regarding ginger.

One last thing to note: you do not have to use homemade almond milk if you do not enjoy almond milk. You can make your own cashew milk, pecan milk, walnut milk, or even sunflower seed milk if you prefer those varieties. Just make sure that you do not use store bought nut or seed milks for the chia pudding. Most store bought varieties contain added sugars, thickening agents, and preservatives.

In case you don’t know how to pick a pineapple at the store, we want to give you a little tip. Choose a larger fruit, as that will yield less waste. Tug on the top leaves of the pineapple. If they pull out easily, then the pineapple is ripe and ready to enjoy. You should not see any bruises, wrinkles, or soft spots on the pineapple, or else it will not be enjoyable. Additionally, check the bottom of the pineapple to ensure that no mold has formed on the outside. That is a definite sign of an overripe or damaged pineapple.

If you are not a big spice fan, this is the salsa for you. The jalapeño brings a hint of spice to this salsa, but it doesn’t contest with the sweetness of pineapple and strawberry. You can even leave the seeds in the salsa! The sweet fruit also helps to mellow out the intensity of the red onion. If you really want to cut the allium flavor from the onion, season the onion with salt and squeeze the lime over before adding the rest of the ingredients. Once you make the salsa and enjoy some, you can store it in an airtight container in the fridge for up to four days.

Making a summer salad? This is the dressing you’ve been looking for. It also differs from other dressings, in that most do not blend fresh seasonal fruit into them. Because it contains fresh peach, the lifespan is not nearly as long as a store bought dressing. In fact, you have to use this dressing within three days of making it, and that’s even when you store it in an airtight container in the fridge. Because the dressing has fresh lemon juice, you want to use a peach that is ripe. Riper peaches offer a sweeter flavor, which balances the acidic nature of the lemon.

Once you prepare the ingredients, add all of them to a blender and blend until smooth. Ideally, peel the peach, as this will make for a more pleasant eating experience. You don’t have to peel the peach if that is too much work. Instead, you can blend the unpeeled peach cubes with the rest of the ingredients and strain the blended mixture through a fine mesh sieve. That will get rid of any red peel flakes in the dressing.

This is potentially the quickest and easiest jam you’re ever going to make. You don’t have to simmer fruit and sugar for a while until it thickens into a sugary, jammy spread. You also don’t need added sugars or pectin to yield the consistency that is common in most jams. Another reason you don’t need pectin is because dried fruit only contains 22% water, so there is no need for a thickener. This raw apricot jam has incredible depth of flavor and made entirely from dried fruit, a touch of maple syrup, and a pinch of sea salt.

Since dried fruit contains less water than fresh fruit, you want to rehydrate it prior to making the jam. By rehydrating the dried fruit, you make it softer and easier to blend. Just soak in a bowl of warm water for a few hours and be sure to discard the soaking water. The reason we decided to use dried apricots is because they, much like figs, cherries, and plums, are juicier dried fruits. Just make sure that you purchase dried apricots that are free of sulfites, added sugars, and preservatives. Those dried apricots tend to be brown in color, so your jam may not be the most picturesque orange hue you’re dreaming of, but it is chemical-free and healthier.

Just like fresh fruit jam, dried fruit jam is very versatile. Use it instead of jelly on a classic PB&J sandwich, spread it on crepes, or use it as a topping for your yogurt bowl. It should be noted that all of those suggestions are acceptable to enjoy if you are not cleansing. Should you want to enjoy this while cleansing, you can use it as a topping for banana or cashew pudding, chia pudding, or on raw vegan ice cream.
