As lovers of chia pudding, we are always trying to find fun, new ways to enjoy this delicious treat. It makes for a great grab-and-go breakfast, pre- or post-workout snack, or even a healthy dessert, depending on the recipe. That said, we worked very hard to measure out every ingredient in a precise way. So while we always encourage creativity and experimentation in the kitchen, you shouldn’t have to doctor up this recipe to make it taste better than it already does.

For this salad recipe, though, we eliminated the lettuce and went straight to shredded cabbage for the base. It’s more of a slaw than a salad, but we aren’t about to debate the qualifications of a slaw versus a salad. The fact of the matter is that this recipe embraces fall ingredients and is quite delicious.

For this cabbage apple salad, you can use red or green cabbage, or a mix of both if you want more contrasting colors. The same can be said for the apples. You can use Granny Smith (green) apples, Fuji apples, Honeycrisp apples, or Red Delicious apples. Can’t decide which one to use? Use a combination of two or more apple varieties to establish sweet and tart flavors in this salad. The combination of cabbage, apples, walnuts, and sweeter dressing creates a lovely mix of sweet and savory flavors. Will you serve yourself on a separate plate or eat straight out of the salad bowl?

When it comes time to prepare the salad, you can choose to cut your ingredients uniformly or slightly different. You can thinly slice the apples, or you can cut them into matchsticks to be more similar to the shredded cabbage. Crumble the raw walnuts and then drizzle the dressing over everything. If you want to make this recipe more fall-themed, consider adding some dehydrated cranberries or pomegranate seeds. Dried cranberries are pictured, just FYI. Just make sure that the dehydrated cranberries are free of added sugars and preservatives.

Instead of paying $21 for a small jar of raw cashew butter, buy a large bag of raw cashews and you can make multiple jars yourself. All you need is a food processor, the cashews, cinnamon, and alcohol-free vanilla extract. Just keep in mind that it can take 10-15 minutes to become velvety smooth. You will have to stop blending, scrape down the sides of the processor bowl, and continue blending to ensure all of the cashews blend evenly. You can also leave it a little chunky if that’s what you prefer.

One thing to keep in mind about this highly addictive cashew butter is that it does come with a small price. It is naturally rich in calories and fats, even though they are healthy fats. Keep servings small because you can rack up a lot of calories very quickly if you go at this jar with a spoon. If losing weight is your goal, keep yourself away from this, or keep your portions very small and limited.

A salad doesn’t have to have a long list of ingredients in order for it to be delicious. This simple cucumber apple salad contains exactly what the name says: cucumbers and apples. Toss the apple and cucumber cubes with a simple apple cider vinegar dressing and you are in business. It’s a great, light summer salad that you can serve at room temperature or chilled. Although we used Granny Smith apples, feel free to use whichever apple variety you enjoy. If you prefer a juicier texture and sweeter flavor from your apple, consider using Fuji or Honeycrisp varieties. If you strive for contrasting colors, use Red Delicious or Pink Lady apples.

You can never go wrong with a good combination, and that is exactly the case for cucumbers and apple. Ideally, try to dice the apple and cucumber into the same size cubes for uniformity and ease of enjoyment. Plus, cutting them the same size will create even texture throughout the salad. Pour the dressing over the cucumber and apple cubes and let it sit for about 10 to 15 minutes, so that the flavors can get to know each other. That also gives the apples and cucumbers time to absorb the dressing, which is highly addictive and refreshing. If you look at the ingredient label on a pint or quart of ice cream, you will notice a long list of ingredients, with sugar being high on the list. The more complicated your flavor (think moose tracks, or sea salt caramel with chocolate swirl), the more sugar and ingredients the ice cream has. This apricot sorbet is the opposite of that. Not only is it free of excess sugar, but it also doesn’t contain stabilizers or other preservatives. It is pure, raw vegan goodness!

When life gives you apricots, you make apricot sorbet, because you sure can’t make lemonade out of apricots! Apricots have a slightly tart and sweet flavor profile, but every now and again, you can come across a batch with subpar flavor. Sure, you could dehydrate that batch to make dried apricots, or you could turn the apricots into a magnificent sorbet. We did exactly that because making sorbet is very simple and requires almost none of your time. You simply blend the ingredients together, add them to a freezer-safe container, freezer until firm, and then scoop to enjoy.

From start to finish, this sorbet takes about 10 minutes to prep and blend. Make it a little after lunch and it’ll be ready to enjoy by the time you finish eating dinner. Even though the sorbet is sweetened with maple syrup, it is not overly sweet. The fresh lemon juice brings a zesty acidity, so the sorbet is not overly sweet. It is beautifully creamy and smooth, so make it now while apricots are in season. Get them before they leave supermarket shelves!
