You can’t enjoy avocado toast while cleansing, but you can enjoy the hell out of avocados. They are excellent sources of healthy fats, magnesium, fiber, potassium, and antioxidants. Adding avocados to your salads, smoothies, sauces, and even breakfasts or desserts, such as this chia pudding, can help you feel fuller for longer. That means that you won’t need to snack as much between meals.

Even though you can enjoy this chia pudding for breakfast, dessert, or a pre- or post-workout snack, it doesn’t taste like guacamole, despite how it looks. This luxurious, creamy pudding has just the right amount of sweetness, thanks to the grade A maple syrup. Should you want to elevate this recipe even more, you can add a dash of alcohol-free vanilla extract and a half of a banana. You do not have to add anything else to the recipe, although we do recommend serving the chia pudding with freshly sliced bananas or fresh berries.

When it comes to preparing this chia pudding, you can go about it a couple different ways. If you decide to make it sans machines, you will have to thoroughly mash the avocado before you mix in the other ingredients by hand. For an easier time, follow the directions (below) and use a blender. If you would rather use an immersion blender because it is your fun new kitchen toy, then go for it! The only suggestion we have for all preparation methods is to fold in the chia seeds by hand, as opposed to blending them.

Disclaimer: Beets can stain your hands and most everything, but the color does wash off. This is just for you to be aware during the spiralizing process. Consider grabbing a cutting board you don’t care about, or you can simply bleach it afterwords.

To clarify, the avocado sauce is not runny guacamole. The sauce is creamy, smooth, slightly tangy, and a perfect complement to the earthy flavor of the beetroot noodles. The color combination is also quite beautiful, with the bright green beautifully contrasting the deep, red pigment of the beets. To get the sauce into the perfect, creamy consistency, we recommend that you blend the ingredients in a food processor. You can blend everything in a high-speed blender, but a food processor will whip everything quickly and evenly.

This recipe uses one of our favorite recipes, the Raw “Tuna” Salad, and enhances it by mixing it with fresh vegetables and spooning it inside avocado halves. And who was it that said that you can’t eat anything on a raw food diet? We understand that the raw vegan diet can seem limiting, but you just have to think outside the box. When you get creative with ingredients, there’s no limit to what you can make.

This isn’t raw tuna in the classic sense; rather, it’s more similar to tuna salad. How does one go about making raw tuna without using fish? Well, this recipe uses raw sunflower seeds and various seasonings that yield a tuna salad-like flavor. The key ingredient is dulse, which makes it taste like it was from the sea, so to speak. Dulse is naturally salty with a pleasant minerality that tastes like, well, the ocean. That makes it perfect for the raw “tuna.” If you have some extra seasonings that you think may fit well with the recipe, you can add them as well. We encourage you to let your inner chef out and season like a champ, so long as the seasonings are cleanse-approved.

This is a very filling entree, so don’t make too much. You can always use less avocados and fill more avocados with the “tuna” in the coming days after you make it.

Although this recipe calls for red grapes, feel free to purchase the grapes that you enjoy most.
