How is a two-ingredient chocolate truffle even possible? How could such a truffle be raw vegan? We have two ingredients that will explain: raw cacao powder and dates. This heavenly combination is the perfect combination of sweet and bitter. Because the raw cacao powder is unsweetened, it retains that classic bitterness from dark chocolate. Each bite is wonderfully balanced, but careful not to eat too much of them. Dates contain a lot calories and sugars and even though the sugars are natural, keep that in mind as you enjoy these desserts.

Dates are incredibly useful on the raw vegan diet. You can use them to sweeten smoothies or dressings, or incorporate them into desserts. We love Medjool dates, but make sure that they don’t contain any added sugars or preservatives. Typically, you have to buy dates in bulk. If you are worried that you won’t use them, you can pit the dates and then freeze them to keep them fresh for longer. When ready to use, you can soak the frozen dates in warm water before blending to ease that process.

Blitz these two ingredients together in a food processor until you achieve a smooth paste. The only thing left to do is form the mixture into small, bite-size truffles, and place them in the freezer to harden. You can enjoy them as is, or you can elevate them to the next level by dusting them with more raw cacao powder. We suggest that you dust the truffles instead of rolling them in raw cacao powder. You will likely end up with too much powder on the truffles. Use a mesh strainer to dust them and make sure to rotate them as you do it for an even coat.

Can you refer to these raw chocolate hazelnut truffles as energy bites? If you want to, then yes. We classify this recipe as more of a dessert than a snack, though. That said, they are rich in healthy fats and protein, making them great for satiating you between meals. One or two will do the trick because they are calorically dense because of the raw hazelnuts. Just one ounce of hazelnuts contains 176 calories, so just be mindful of that when enjoying this raw vegan dessert.

We often talk about the health benefits of almonds, walnuts, cashews, raw cacao powder, and other nuts and seeds. Because we don’t typically feature hazelnuts, we wanted to highlight how they benefit your health. Forget about Nutella for a second, because that doesn’t do your body any favors, despite how delicious it is. Although we don’t have a raw vegan version of Nutella, we do have this chocolate spread recipe (click here).

Hazelnuts are naturally rich in vitamin E, magnesium, copper, thiamin, manganese, folate, phosphorus, and vitamin B6. Health experts note that the antioxidants (phenolic compounds) in hazelnuts proved to lower blood cholesterol and inflammation. They may also help protect the heart and were able to significantly reduce oxidative stress. Additionally, the high concentration of antioxidants, specifically the proanthocyanidins, may offer anti-cancer properties. In fact, some test-tube and animal studies showed that proanthocyanidins may may help protect against certain cancers. Lastly, the manganese also aids the reduction of oxidative stress, which may further reduce the risk of cancer.

The great thing about these raw brownies is that they they contain healthy fats, fiber, protein, and other nutrients that promote satiety. Because they are richer in calories, you do not want to eat a ton. For example, this recipe yields an 8″x8″ pan, which you cut into 16 pieces. Each brownie has about 150 calories, due to the pecans, almonds, dates, and sesame seeds. Just keep that in mind when you reach for a square.

In order to make brownies, you need chocolate, but not the type you are thinking of. There is not processed chocolate powder mix in this recipe! This recipe calls for 100% raw cacao powder, which you should not confuse with cocoa powder. Cacao powder has powerful nutritional benefits and no added sugars, which cocoa powder tends to contain. That is a general rule of thumb with raw vegan recipes that call for chocolate, though. Always opt for raw cacao powder!

Everyone is always in need of a quick, healthy snack that tastes great. The snack doesn’t need to be sweet, but a lot of people do enjoy a sweet treat when hunger strikes. Why not satisfy your sweet tooth in the healthiest way possible? Eating whole foods that are nutritionally dense can help fill you up and prevent you from snacking between meals. In fact, one, two max, of these energy bites will be satiate you.

These energy bites are made from nuts, nut butter, raw cacao powder, and dried raspberries. All you have to do is blend all the ingredients together in a food processor, stopping to scrape down the sides as needed. You want to make sure that all of the ingredients are full incorporated before you form the mixture into bite-sized balls. Make sure that you wet your hands when it comes time to form the mixture into balls. That will help prevent the mixture from sticking to your hands. And make sure to line a baking sheet with parchment paper so as to avoid sticking while they harden in the fridge or freezer.

As a final note, make sure that the dried raspberries are free of added sugars and preservatives like sulfur dioxide. Don’t buy freeze-dried raspberries, either. Purchase dried raspberries either online or from a health food store. You can also chop up some of the dried raspberries and roll the balls in them if you want. That creates a little more texture and sweetness, but it is an optional step.

Homemade energy bars are easily made by blending ingredients in a food processor. Spread the blended mixture into an even layer, score the layer into bars, and refrigerate or freeze until firm. Not only do they taste better than most store bought healthy bars, but they are also free of added sugars and preservatives. If you want them to stay fresh for longer, keep them in an airtight container in the freezer. Pop them out whenever you want to enjoy a guilt-free, energizing snack.

Why will you like these bars? First off, they are very easy to make. It does help to have a food processor because blending these ingredient in a blender can be very difficult. They are 100% raw vegan, gluten-free, and dairy-free, making them great for almost any diet. Even thought they contain dates, they are not overly sweet because the cacao powder and nuts balance the sweetness.

A trick for making your date nut bars easier to eat is to first pulse the nuts into a coarse, crumbly consistency. You don’t want to grind them into a powder because that won’t yield great texture for the bars. Empty the coarsely ground nuts into a bowl and then add the dates and coconut oil to the processor and blend into a smooth paste. Once you do that, you can add the ground nuts, desiccated coconut, and cacao powder back to the processor. After that, you spread the mixture onto a baking sheet or baking dish lined with parchment paper, score the layer into bars, and refrigerate. What’s the next step? Enjoy eating the bars!

Some people are skeptical of homemade, raw vegan ice cream recipes. They don’t want the ice cream to have a liquid-like consistency, and rightly so. Nobody wants to slurp up soupy ice cream, but you don’t have to worry about this with this recipe. You can enjoy it straight out of the food processor if you prefer the consistency of soft serve, or you can freeze it until it’s firm enough to scoop.

Is it wrong to enjoy ice cream when the weather is cold? We think there is no better time to enjoy the good stuff! The reason for that is because cold weather prevents the ice cream from melting quickly. That is up for debate, but you know what isn’t up for debate? The flavor of this ice cream! It has rich notes of chocolate that pair beautifully with the nuttiness of the raw almond butter. Because bananas are so sweet, you don’t have to add extra sweetener like raw agave nectar or grade A maple syrup, but you can if you so desire.

As for how you make the ice cream, we encourage that you blend the ingredients in a food processor, unless you have a high-speed blender. A Vitamix will get the job done because it has the power to pulverize the frozen bananas. You may need the tamper in order to fully incorporate the ingredients in the blender, whereas you may need to scrape down the sides when using a food processor. Whichever appliance you use, one thing is for sure: the flavors will be bold and keep you coming back, bite after bite.

Chia pudding will always be one of our favorite recipes to make. There are so many options and it involves very little prep time. Chia pudding makes for a great healthy snack, breakfast, or even dessert, depending on how you flavor it. In the past, we’ve made coconut, pumpkin spice, vanilla, maple, and other chia puddings, but we have yet to do a chocolate banana variation. Needless to say, we are very excited about this!

Instead of using sugary, processed chocolate chips for the chocolate flavor, this recipe calls for raw cacao powder. Despite the bitter flavor profile, this recipe is still wonderfully sweet because of the bananas and maple syrup. You can always add more maple syrup if the bitter chocolate flavor proves to be too intense for your palate. With everything else that goes into this recipe, your taste buds shouldn’t have any issues. Well, they may just make you want more of the chia pudding!

The way you make the chia pudding is really up to you. This recipe calls for whisking the dry ingredients in a bowl and then slowly combining them with the wet ingredients. Cover the mixture, leave in the fridge overnight, and then enjoy in the morning. If you want to enjoy the chia pudding sooner, you can combine all of the ingredients in a blender and blitz until you achieve a pudding-like consistency. This is not necessary, but it is a viable option. Now…let’s make some chia pudding!
