If you want a more colorful stone fruit salad, consider using white nectarines and yellow peaches, or vice versa. The plums offer a deep red-purplish hue and slightly tart flavor profile. If they are softer, then they’ll be on the sweeter side.

Apricots add a wonderful orange color to the fruit salad, and the dark red cherries make it pop! If you prefer Rainier cherries, which have a whiter color, then you can use those if they are available to you. Now, if you just want to cut up the fruit and toss them together, that is a perfectly acceptable way to assemble a fruit salad. You can leave the skin on your nectarines because the skin contains extra nutrition, especially fiber. You may not even notice that the skin is in the jam if you have a high-speed blender. If you are worried about the pinkish color that the skin yields, you can peel the nectarines prior to blending. Lastly, and this is a disclaimer that everyone should know, make sure to pit the nectarines. The last thing you want is for the pits to end up in your blender.

If you prefer a flavor that is more tart, use nectarines that are still firm. Use softer, riper nectarines if you want a sweeter component to your salsa.

The great thing about this salsa is that you can enjoy it on or off the cleanse. If you are cleansing, consider eating this with one of our several raw vegan taco recipes. You can also spoon some of the salsa into a lettuce leaf, roll it up, and enjoy it that way. Consider buying some baby sweet bell peppers, cutting them in half to remove the seeds, and using them as raw “chips.” If you are not cleansing, get a bag of unsalted corn tortilla ships and dig in. The possibilities are endless!

For the “hot peppers” on the ingredient list, you can opt for jalapeños or serranos. Incorporate the seeds or discard them if you don’t want the salsa to be as spicy. Although the sweetness of the nectarines will tame the intensity of the red onion, toss the red onion in the lime juice and sea salt before adding in the other ingredients. The salt and lime tames the allium flavor of the onion and makes it a little more palatable.
