We love when summer arrives because it indicates stone fruit season. Nectarines, peaches, cherries, apricots, plums, and pluots all belong to the stone fruit family. They have a limited season, so get your hands on them before it’s too late. You can incorporate them into smoothies, salads, dressings, chia puddings, desserts, and so much more. In the case of this nectarine nice cream, we only used three ingredients: nectarines, bananas, and homemade almond milk. Blend those ingredients together in a food processor for several minutes and then enjoy a refreshing, summery dessert that is 100% raw vegan.

This nice cream is deliciously creamy, almost like soft-serve. In order for it to be ready once you finish blending, make sure that you freeze the bananas and nectarines overnight. The best way to do this is to line a baking sheet with parchment paper and scatter the nectarine and banana pieces across the sheet. Try to make sure that the pieces of fruit do not overlap, as that will cause clumping. You want the fruit separated, as that will make the blending process much easier.

Because there is not a lot of liquid, you may have to stop blending, scrape down the sides, and continue blending to fully incorporate the ingredients. Even if you have to do that a couple times, it’s perfectly fine. Let the food processor do what it can do before you get worried and start adding more liquid. The more liquid you add, the less like soft serve it will be. It also means that you will have to transfer the mixture to a freezer-safe container and freeze for a couple hours, or until frozen to scoop and enjoy the nectarine nice cream.

Mango strawberry sorbet is a pleasant, balanced frozen dessert that is a beautiful blend of the tropics. The sorbet is a vibrant color that is as inviting as its refreshing flavors. It is the perfect go-to treat for warmer spring weather. Each spoonful of this velvety sorbet melts gently on your tongue, leaving behind and sweetly tart flavor of strawberry mango goodness.

Should you not want to use mango, or if mangos are not in season in your area, you can swap them out for ripe peaches, nectarines, pineapple, or another fruit that yields a similar tropical flavor. You can also swap out the strawberries with other berries, such as raspberries, blackberries, or blueberries, if you prefer those flavors. Those other berries also go great with mango! Once you have your blend, taste the mixture and adjust the ingredients as needed. You may want to add more lime juice, agave nectar, or even more strawberries or mango. Trust your taste buds!

Once you blend the ingredients together, pour the mixture into a freezer-safe container. If you pour the mixture into a shallow dish, it will freeze more quickly than if you pour it into a deeper dish. Cover the dish and place it in the freezer for about four to six hours, or overnight. Just leave it in there until it is frozen solid. You can stir the sorbet every couple hours with a fork to break up any ice crystals that form. That will yield the best texture. When ready to serve, let the sorbet sit at room temperature for five to 10 minutes. That will allow it to soften just enough to be perfectly scoopable.

You can leave the skin on your nectarines because the skin contains extra nutrition, especially fiber. You may not even notice that the skin is in the jam if you have a high-speed blender. If you are worried about the pinkish color that the skin yields, you can peel the nectarines prior to blending. Lastly, and this is a disclaimer that everyone should know, make sure to pit the nectarines. The last thing you want is for the pits to end up in your blender.

If you prefer a flavor that is more tart, use nectarines that are still firm. Use softer, riper nectarines if you want a sweeter component to your salsa.

The great thing about this salsa is that you can enjoy it on or off the cleanse. If you are cleansing, consider eating this with one of our several raw vegan taco recipes. You can also spoon some of the salsa into a lettuce leaf, roll it up, and enjoy it that way. Consider buying some baby sweet bell peppers, cutting them in half to remove the seeds, and using them as raw “chips.” If you are not cleansing, get a bag of unsalted corn tortilla ships and dig in. The possibilities are endless!

For the “hot peppers” on the ingredient list, you can opt for jalapeños or serranos. Incorporate the seeds or discard them if you don’t want the salsa to be as spicy. Although the sweetness of the nectarines will tame the intensity of the red onion, toss the red onion in the lime juice and sea salt before adding in the other ingredients. The salt and lime tames the allium flavor of the onion and makes it a little more palatable.
