Most people don’t usually think to roast radishes. It is common to see radishes thinly sliced at salad bars or cut in larger pieces at taco stands. Sometimes you see thinly sliced daikon in pickled slaws, especially in Southeast Asian cuisine. Roasted radishes, though, are beautifully tender, golden brown, paleo- and vegan-friendly, and a perfect low-carb alternative to potatoes. They also tend to have a pungent, peppery flavor in their raw form, and it can be quite assertive to the uninitiated. Roasting them helps to tame that peppery flavory and transform it into a sweeter, caramelized turnip that is juicy and delicious.

You can roast most radishes, and they’ll become tender, sweeter, and slightly nutty after roasting. Classic red glove radishes (the bright red bulbs) are the most common varieties, although daikon is another common, albeit larger, radish. French breakfast radishes have an elongated shape and become slightly sweet when you roast them, either in the oven or the pan. Watermelon radishes are also ideal for roasting, especially when you cut them into wedges. Plus, the color of watermelon radishes is absolutely mesmerizing.

It is imperative how you cut the radishes for this recipe. You want to cut them in small wedges, otherwise they may not roast properly, or some parts may be hard and unpleasant to eat. Besides their delicious flavor, radishes are also full of various nutrients. Studies confirm that some nutrients in radishes may aid digestive health, but most of the research focuses on the antioxidant compounds. For example, some of the compounds work to protect the body from liver, colon, breast, lung, cervical, and lung cancers. Coenzyme Q10 (COQ10) in radishes also blocked the formation of diabetes in animals, but more human research is necessary to claim that it does this in humans.

Let’s talk about soup, ba-bay. Let’s talk about how delicious it-can-be. Although zucchini is a type of summer squash, it is typically available year round. The great thing about zucchini is that it is low in calories and rich in nutrients, so you get a lot of bang for your bite!

Zucchini is naturally rich in vitamin A, manganese, potassium, folate, copper, magnesium, vitamin C, phosphorus, fiber, thiamine, and vitamin B6. It may also provide small amounts of several B vitamins, calcium, zinc, and iron. Interestingly enough, raw zucchini provides a similar nutritional profile as cooked zucchini, only with less vitamin A and more vitamin C. But zucchini is not the only standout ingredient in this soup. The following ingredients are equally as important:

  • Fresh basil: This is an absolute must! Not only is basil aromatic and robust in flavor, but it also helps color this soup a beautiful green hue. You should not substitute it with dried basil!
  • Onion and garlic: First of all, you should always add onion and garlic to most meals. They enhance the flavor of the soup, adding a sweet and savory essence to the soup. It’s possible for people to be allergic, so we understand if you cannot eat them, but we do not recommend omitting either of these ingredients, as they provide flavor and valuable phytonutrients.
  • Lemon juice: Fresh is best, people! Adding the juice of half a lemon not only brings necessary acid to this soup, but also makes it a bit brighter and more refreshing. Just make sure to add it at the end of the cooking process to prevent it from cooking out.
  • Broth: You cannot have this soup without broth, but make sure to get either low-sodium or unsalted vegetable broth. Regular vegetable broth can contain a lot of sodium per serving, so make sure you read the labels!

What is turmeric rice, or yellow rice? Depending on the region, this rice may be referred to by different names. There are variations within India, Middle Eastern countries, and several Asian countries. Different regions will add local spices or aromatics to flavor the dish. The signature yellow color typically comes from one of three spices: turmeric, annatto, or saffron. Those can be used interchangeably to give white rice that bright yellow hue. No artificial dyes here, folks! We banned them from our recipes long before RFK Jr. ever thought about it.

For this recipe, you will use turmeric powder, not the freshly grated turmeric root. You only need one teaspoon of turmeric powder, which adds a lovely earthly flavor that complements the garlic, coconut oil, and onion, which are the three primary components of the dish. The rice also cooks in low-sodium vegetable stock, which enhances the flavor. The best part, besides the intensely rich flavor, is that it comes together in just 20 minutes in one pot!

Finally, a potato side dish that does not have dairy! Potatoes are a staple ingredient in many kitchens around the world. There are Yukon gold potatoes, sweet potatoes, yams, Russet potatoes, red skin potatoes, and purple sweet potatoes. You can use potatoes in myriad ways, roasting them, boiling them for a mash, frying them, etc. We think, and although this recipe is a bit more tedious, that Hasselback potatoes are top tier. Do they contend with your favorite potato side dish? You’ll have to be the judge of that.

We love these Hasselbacks because they are visually exciting and taste incredible. Load them up with spices and feel free to add your own set of herbs to enhance the dish. As far as cooking goes, the process is very easy. You roast the potatoes in the oven at 400 degrees Fahrenheit for about 20 minutes and that’s that. The tedious element is how you cut the potatoes. The first thing you have to do is make sure that your knife is sharp. If your knife isn’t sharp, the preparation will be a lot more difficult. Once you have a sharp knife, take two wooden spoons and lay them flat on a cutting board.

One by one, place your potatoes between the handles of the spoons, ensuring that the potato is elevated about the cutting surface. Slice eighth-inch thick slices along each potato, making sure that you hit the spoon handles, not the cutting surface. Once your potatoes are successfully cut, toss them in a bowl with the olive oil and seasonings. Make sure you coat them liberally! Bake in the oven until soft (about 20 minutes) and then enjoy immediately.

Are you ready to enjoy a homemade salsa that is every bit as spicy and delicious as it is chunky and smoky? Some people like smooth, pureed salsa, while others prefer the chunky salsas that you make in a molcajete. Is the salsa imperfect? Yes, but it’s also perfectly chunky, smoky, and full of flavor. Not everything that you make has to look like a work of art. Sometimes, foods or dishes that don’t satisfy everyone’s aesthetic appeal taste the best! That’s how we feel about this salsa.

A molcajete, in case you are unaware, is the Spanish word for mortar and pestle. The name comes from the Aztec words that translate to “seasoning” and “bowl.” A traditional molcajete varies slightly from your average mortar and pestle, though. It is made from volcanic rock and the hard, rough surface makes it easier to grind spices or mash different ingredients, for example, the pan-roasted ingredients for this salsa. Just make sure that you don’t add all of the ingredients to the molcajete at once. Start by mashing the onion and garlic, then follow that with the jalapeño.

Once you have a smooth paste of onion, garlic, and jalapeño, you can add the tomatoes, one or two at a time. Don’t overcrowd the molcajete, or you’ll have tomato juices flying all over the place. Add your chopped cilantro, cumin, sea salt, and black pepper and mix to combine. Serve with some sturdy chips that can support the weight of this homemade chunky salsa. It’s got a little kick, but not so much so that it overpowers the rest of the ingredients. If you like a spicier salsa, add two jalapeños!
