This vibrant vegan pesto made with broccoli stems offers a refreshing twist on an old classic sauce (pesto) while reducing kitchen waste. We say this because people typically discard broccoli stems and only focus on using the florets. The stems offer valuable nutrients and taste incredible, whether you blend them into a pesto, shred them for slaws, or cook them in stir-fries. This recipes calls for blending broccoli stems with basil, garlic, lemon, pine nuts, nutritional yeast, and a handful of seasonings to create a naturally creamy pesto that balances earthiness with subtle sweetness. This smooth, green pesto adheres beautifully to zoodles, spreads easily on sandwiches, or works as a tasty dip for fresh vegetables.

Using broccoli stems in pesto also invites a pleasant yet mild flavor that doesn’t overpower the aromatic basil. They have a firm yet tender texture once you peel them, and they give the sauce body without the need for cheese. That makes this recipe an easy vegan, and even raw vegan, staple for future cooking. Due to the relatively light flavor of the stems, they pair especially well with citrusy ingredients, allowing the fresh lemon juice to brighten the pesto without creating a bitter flavor.

Broccoli stems themselves are generally under-appreciated in most kitchens. They are rich in fiber, which supports digestion and helps you feel fuller for longer, and they also contain many of the same nutrients found in the florets, such as vitamin C, vitamin K, and potassium. Because people typically discard the stems, using them helps reduce food waste while simultaneously stretching your grocery budget. Maybe now that you have this recipe, you can figure out more ways to incorporate them into other recipes you make in the future.

Hello there, fellow fall enthusiasts! If you’re into fall vibes and love the tart flavor of raw cranberries, you are absolutely going to dig this raw vegan cranberry chia jam. Simplicity is the name of the game for this recipe, as it only contains four ingredients: fresh cranberries, water, chia seeds, and a splash of maple syrup for sweetness. The best part? There are no problematic additives or preservatives, no artificial sweeteners, and no dyes or other agents. This recipe is just pure, natural goodness that captures the essence of autumn in every spoonful.

Not only is this jam tasty, but also vibrant, stunning, and incredibly healthy. Cranberries are some of the richest sources of antioxidants and vitamin C, which works to boost immune function and encourages collagen production. Chia seeds add a healthy dose of omega-3 fatty acids, fiber, and protein, helping you stay full and satisfied between meals. Plus, since it’s raw and made with whole ingredients, it retains all those beneficial nutrients, making it a guilt-free way to enjoy a sweet spread.

Even though this is a jam, you cannot slather it on toast if you are on the raw vegan diet. You can make raw pudding from cashews and use it as a topping, or you can use it as a dip for raw apple or pear slices. After cleansing, swirl it into your yogurt, or even use it as a topping for oatmeal. It is very versatile, fresh, and perfect for fall snacking. Making it is a breeze too—just blitz the ingredients together in a blender or food processor and refrigerate to let the jam thicken up. Let us know how you like it in the comments below.

When you think of chocolate spread, you probably think of Nutella. It’s a classic spread that not only contains hazelnuts, but also milk, soy, vegetable fats, flavorings, and sugar…lots of sugar. A one-tablespoon serving of Nutella has the following stats:

  • Calories: 80 calories
  • Fats: 4.6 grams (g)
  • Carbohydrates: 8.6 g
  • Sugar: 8.4 g
  • Protein: 0.9 g

If it is truly a hazelnut spread, why is sugar the first ingredient? That is never a good sign for your health. Fortunately, this recipe is the perfect dip, spread, or breakfast topping. You can even eat it by the spoonful! Just be mindful of how much you eat. because cashews also contain a lot of calories. It does taste good on just about anything and satisfies your chocolate cravings in a healthier way than Nutella does.

Besides the ingredients, the other primary difference between this recipe and a store bought chocolate spread is that is not shelf-stable. This recipe only lasts for about a week, but you have to store it properly in order for this to happen. You will need raw cashews, raw cacao powder, agave nectar, vanilla extract, coconut oil, and sea salt. It’s possible that the chocolate cashew butter will separate slightly, due to the fact that it contains agave nectar and coconut oil. Just give it a good mix every time you eat it and you’ll be fine!

What is cinnamon vanilla cashew butter? Please, allow us to introduce you to your new, favorite indulgence. It is regular homemade cashew butter, but with the addition of warming cinnamon and vanilla. It’s as though plain old cashew butter got dressed up for a night on the town. Didn’t this recipe arrive just in time for this cooler fall weather? Not only is it incredibly easy to make (although blending process can be a little lengthy), but it is also brimming with flavor.

If you have ever browsed the raw vegan nut butters at the grocery store, you know that they can be quite expensive. That is especially true for cashew butter and almond butter. Instead of paying $21 for a small jar of raw cashew butter, buy a large bag of raw cashews and you can make multiple jars yourself. All you need is a food processor, the cashews, cinnamon, and alcohol-free vanilla extract. Just keep in mind that it can take 10-15 minutes to become velvety smooth. You will have to stop blending, scrape down the sides of the processor bowl, and continue blending to ensure all of the cashews blend evenly. You can also leave it a little chunky if that’s what you prefer.

One thing to keep in mind about this highly addictive cashew butter is that it does come with a small price. It is naturally rich in calories and fats, even though they are healthy fats. Keep servings small because you can rack up a lot of calories very quickly if you go at this jar with a spoon. If losing weight is your goal, keep yourself away from this, or keep your portions very small and limited.

Get ready to enjoy a refreshing peach salsa that as visibly stunning as it is flavorful. It’s a unique take on the classic pico de gallo, combining the natural sweetness of ripe peaches with classic zesty, tangy, spicy salsa ingredients. Made with freshly diced peaches, this salsa incorporates red onion, jalapeño, cilantro, tomato, and lime juice, creating a perfectly balanced blend of sweetness, heat, and acidity. The result is a bright and inviting dip that enhances a variety of dishes.

The texture of this peach salsa is lively and appealing, offering juicy, tender peach cubes that provide a punch of natural sweetness with every bite. The addition of crunchy elements like diced red onion and crisp cilantro adds contrast, while the jalapeño brings a slight kick that elevates the overall flavor profile. Not a huge fan of spice? You can omit the jalapeño, or tame the spice by removing the seeds before dicing it up. Lime juice not only adds acidity, but also helps to bring out the freshness of the ingredients, making the salsa especially vibrant and lively. It also works to reduce that allium flavor in the onion.

This salsa is perfect for summertime gatherings or any occasion that calls for a light, refreshing appetizer. Not only is it incredibly versatile, but it is also easy to prepare. The sweet and spicy notes make it a delightful accompaniment for those seeking a fresh, fruity twist. Don’t be afraid to just dive in and treat it as the delicious dip it is!

Summer is in full swing and there is no better way to celebrate warmer temps than with a delicious and refreshing fruit salsa. Think of this recipe like a pico de gallo with pizzazz. We’ve posted a recipe for strawberry salsa and a recipe for pineapple salsa, so why not combine them? Don’t pineapples and strawberries just scream summer? They are classic summer fruits that give the salsa a delightful zing.

In case you don’t know how to pick a pineapple at the store, we want to give you a little tip. Choose a larger fruit, as that will yield less waste. Tug on the top leaves of the pineapple. If they pull out easily, then the pineapple is ripe and ready to enjoy. You should not see any bruises, wrinkles, or soft spots on the pineapple, or else it will not be enjoyable. Additionally, check the bottom of the pineapple to ensure that no mold has formed on the outside. That is a definite sign of an overripe or damaged pineapple.

If you are not a big spice fan, this is the salsa for you. The jalapeño brings a hint of spice to this salsa, but it doesn’t contest with the sweetness of pineapple and strawberry. You can even leave the seeds in the salsa! The sweet fruit also helps to mellow out the intensity of the red onion. If you really want to cut the allium flavor from the onion, season the onion with salt and squeeze the lime over before adding the rest of the ingredients. Once you make the salsa and enjoy some, you can store it in an airtight container in the fridge for up to four days.

This is potentially the quickest and easiest jam you’re ever going to make. You don’t have to simmer fruit and sugar for a while until it thickens into a sugary, jammy spread. You also don’t need added sugars or pectin to yield the consistency that is common in most jams. Another reason you don’t need pectin is because dried fruit only contains 22% water, so there is no need for a thickener. This raw apricot jam has incredible depth of flavor and made entirely from dried fruit, a touch of maple syrup, and a pinch of sea salt.

Since dried fruit contains less water than fresh fruit, you want to rehydrate it prior to making the jam. By rehydrating the dried fruit, you make it softer and easier to blend. Just soak in a bowl of warm water for a few hours and be sure to discard the soaking water. The reason we decided to use dried apricots is because they, much like figs, cherries, and plums, are juicier dried fruits. Just make sure that you purchase dried apricots that are free of sulfites, added sugars, and preservatives. Those dried apricots tend to be brown in color, so your jam may not be the most picturesque orange hue you’re dreaming of, but it is chemical-free and healthier.

Just like fresh fruit jam, dried fruit jam is very versatile. Use it instead of jelly on a classic PB&J sandwich, spread it on crepes, or use it as a topping for your yogurt bowl. It should be noted that all of those suggestions are acceptable to enjoy if you are not cleansing. Should you want to enjoy this while cleansing, you can use it as a topping for banana or cashew pudding, chia pudding, or on raw vegan ice cream.

Is this dandelion pesto nature’s green powerhouse in sauce form? We’ll leave that for you to decide. What we can tell you is that this highly addictive sauces is crafted from dandelion greens, which bring a wild, bitter-green twist to a classic sauce. Forget the basil and cheese, because they aren’t needed here. It still contains pine nuts, lemon juice, olive oil, and other seasonings, but the dandelions require other ingredients to tame the subtle bitterness.

Often dismissed as pesky weeds, dandelions are rich in antioxidants, including vitamins A, C, and K, and other minerals like calcium and iron. That makes this pesto a superfood sauce in disguise! Blended with heart-healthy olive oil, crunchy pine nuts, garlic, lemon juice, turmeric, nutritional yeast, and sea salt, this pesto strikes a great balance between bold, rustic flavors and bright citrusy tones. It’s a great sauce, whether you decide to pour it over zucchini noodles, use it as a dip, or pile it onto a tray of roasted veggies. It truly awakens the palate!

Best of all, it does not contain preservatives, dairy, and artificial additives, which are common ingredients in most store bought pesto sauces. This sauce is pure plant-powered goodness straight from the garden to your plate. Now, that does not mean you have to go foraging for dandelions, but they are a common weed that people discard. Just forage for flavor! Play it safe and buy dandelion greens from the grocery store, a move that will also ensure you have enough greens free of pests for the pesto.

This raw vegan ricotta is a cashew lover’s dream. Made with rich and creamy cashews, this vegan cheese makes for the perfect spread or topping for a raw zoodle entree. Have a cashew allergy or just dislike them? You can replace them with raw almonds, but make sure to use slivered almonds, as whole almonds don’t yield as creamy a consistency. Cashews are commonly used to make vegan and raw vegan cheeses, which is why we decided to use them. Just make sure to soak them for an hour or two prior to blending. That will soften them and allow for easier blending.

For this recipe, we highly recommend using a food processor, as a blender may not be able to do the job effectively. Because this is ricotta cheese, you want the blended mixture to retain some texture. For this reason, keep an eye on the ingredients during while you blend them. If you end up with a super creamy spread, don’t think that you have wasted ingredients. You can still enjoy the spread, which will be more of a creamy sauce. Ricotta cheese tends to have some curds, giving it a lumpy texture. To get a similar texture with cashews, blend for 30 seconds at a time. Scrape down the sides of the processor each time and repeat until you achieve a texture that appeases you.

Finally, if you feel the need to add a little pizzazz to this cashew ricotta, you can do so with the following measurements:

  • Fresh chopped herbs: Add 1/3 cup of cilantro, dill, or basil
  • Pepper: Add one teaspoon of crushed red pepper flakes for spice
  • Fresh chopped garlic: Add one or two cloves of minced garlic

This is a very simple dip that packs a big flavorful punch. Your taste buds won’t know what they hit them, even after you’ve taken 10 to 12 bites. There is just one thing that you have to remember to do for this recipe: make sure that you use the sun-dried tomatoes that are not in oil. These are also known as dry-packed tomatoes, which have a similar texture to dried fruit and come in sealed packages. Traditional oil-packed tomatoes are dried in the same way, only they are submerged in oil and flavorings after being dried.

What Is In This Dip?

To make a quick clarification, there are no olives in this dip, despite what you see in the picture. Additionally, you cannot enjoy this dip with bread if you are cleansing. Now, if you are not cleansing and want to enjoy this dip with a fresh piece of naan or pita bread, knock yourself out! As far as the dip goes, it is made from the following ingredients:

  • Raw cashews: These are great in dips because they are very creamy when blended. They are rich in iron, healthy fats, fiber, magnesium, zinc, and other nutrients.
  • Sun-dried tomatoes: Remember, only purchase the dry-packed sun-dried tomatoes for this recipe. They pack a ton of concentrated tomato flavor, making them great for dips, sauces, and spreads.
  • Garlic: If you are making a savory dish, it would be a shame to omit garlic. It’s great in both raw and cooked preparations, and works impressively well with the flavors in this spread. Garlic offers manganese, selenium, vitamin C, vitamin B6, fiber, and antioxidants like alicin.
  • Lemon: Yet another favorite ingredient of ours, the mighty lemon provides a lovely acidic flavor to this dip. It is also rich in vitamin C and other antioxidants, which help fight free radicals and enhance immune function.

In addition to these ingredients, sea salt, paprika, and olive oil help make this dip come to life. Don’t forget that you can add a little water at a time if you need a little assistance blending.
