So…you’ve been on a quest to find new, interesting raw vegan recipes that keep your taste buds interested in raw foods during your cleansing journey. Well, did you ever think to make ceviche using mushrooms? Ceviche is a traditional South American dish typically made with two essential ingredients: fish and lime. Many people include different types of seafood, such as octopus and shrimp, in ceviche recipes, but one thing is for certain: the seafood never comes in contact with any heat source. The “cooking” of ceviche happens when the seafood marinates in the citrus juice.

Instead of using seafood, this recipe calls for nutrient-dense mushrooms, which take the place of seafood. Because mushrooms have a meaty texture and absorb the other flavors so beautifully, you will not miss the fish one bit. Mushrooms are very low in carbohydrates and calories, but supply a lot of valuable nutrients. They contain trace minerals, some B-vitamins, protein, fiber, and some vitamin D, the amount of which depends on how much sun the mushrooms absorbed while growing. Mushrooms also contain high levels of beta-glucans, which are compounds that keep immune cells alert, and ergothioneine, which helps lower total inflammation.

As for the other ingredients in this recipe, you have a little wiggle room. We decided to include tomatoes, red bell pepper, jalapeño, red onion, avocado, cilantro, and limes, of course. Should you want to change some of the ingredients out for other raw vegan produce items you prefer, feel free to do so. If Eating Chinese Cuisine, Go For Steamed Instead Of Fried

Chinese restaurants usually have a lot of fried food options, but there are many low-cholesterol options to choose from. Instead of enjoying deep fried egg rolls, opt for spring rolls that are steamed. Better yet, see if you can roll the ingredients in lettuce leaves! Steamed rice is a better choice than fried rice, but try to ask for brown rice if it is available. For your main course options, seafood can be a good choice, especially if the protein is steamed. Boiled or broiled seafood entrees are also good options. Just remember to eat shrimp in moderation and choose entrees with lots of vegetables. Resist dishes with a lot of oil if you want to care for your arteries!

Go For Vegetables And Skip Ghee At Indian Restaurants

There are many vegetarian dishes at Indian restaurants, which is great if you want to eat on the healthier side. Chickpeas are a common ingredient in Indian cuisine, and a heart-healthy legume to consider. Try to order dishes with plenty of vegetables, but stay away from heavy dishes with ghee, which is clarified butter made from buffalo’s or cow’s milk. Just as in the above explanation about Chinese cuisine, ask if the dishes can be made with minimal oil, provided the dishes are made to order and not in large pots. 

Skip The Sour Cream At Mexican Restaurants

Believe it or not, one of the healthier dishes (and perhaps most eye-catching) to order when eating at a Mexican restaurant is fajitas. They usually contain a lot of vegetables and don’t have fried components. Black beans tend to be a better choice, since they are rich in soluble fiber. That said, some restaurants over-salt the beans, no matter what type they are. Try to choose corn tortillas instead of white flour tortillas, because corn tortillas contain fewer calories and less sodium, sugar, and saturated fat than flour tortillas. If possible, choose grilled fish as your protein because it is a leaner protein with lower fat and sodium content. Lastly, resist ordering nachos as an appetizer and skip the sour cream and queso, opting for pico de gallo instead.

Avoid Saturated Fats And Limit Fatty Meals

There has been an interesting development in the U.S. Department of Agriculture’s (USDA) latest Dietary Guidelines for Americans. It no longer includes a specific limit for dietary cholesterol, but that isn’t an excuse to eat carelessly. The USDA guidelines and other dietitians advise people to eat as little cholesterol as possible. One study followed 30,000 men and women who did not have cardiovascular disease at the beginning of the study. After a 17-year period, researchers noted that for every 300 milligrams of cholesterol that participants added to their daily diet, they increased their risk of cardiovascular disease by 17%. 

Health experts suggest that cholesterol you eat impacts your blood cholesterol levels, but that isn’t the only factor to consider. Maintaining a balanced diet is the best way to manage your cholesterol levels. Reducing your consumption of meat, especially processed meats like bacon, sausage, and deli meat, can go a long way in reducing cholesterol and your risk of heart disease. Many foods that are rich in cholesterol, including high-fat dairy, bakery items, and fatty meats, also have a higher content of saturated or trans fats, both of which elevate cholesterol. For this reason, do your best to avoid these foods when you dine out. Such foods include pizza, burgers, tacos, sandwiches, and casseroles. Additionally, watch out for cheesy foods, palm oil, cookies, snack foods, and cakes.

Leave the tortillas in the fridge for this recipe because you will not be needing them. You know what? You don’t need to defrost chicken, pork, or beef, either. These raw vegan tacos pack a flavorful punch that will blow your taste buds away. In fact, they won’t know what hit them! Now, the “meat” in this recipe is made from sunflower seeds, sun-dried tomatoes (not in oil), and a long list of seasonings. Trust us when we tell you that these are not lacking in seasoning. Just keep in mind that you have to do a little prep in advance. Soak the sunflower seeds for a couple hours in order to soften them. This step helps them blend a little easier in the food processor, but you don’t want to blend them so much so that they become a paste. Pulse the sun-dried tomatoes and sunflower seeds with the seasonings until you get a crumbly mixture that is similar to ground meat.

One of the best parts of eating tacos is enhancing them with various toppings. Perhaps you go simple with some diced onion and cilantro and a squeeze of lime. This zoodle dish with a homemade raw vegan alfredo sauce is creamy, rich, and absolutely delicious. The sauce has a powerful flavor that complements the crisp spiralized zucchini noodles (a.k.a. zoodles). If you do not have a vegetable spiralizer to make these spaghetti-style noodles, you can use a vegetable peeler to make thinner, flatter zucchini noodles. The spiralizer is a great tool because it separates the core and seeds for you. Additionally, you can use yellow squash if you prefer their flavor over zucchini. Truth be told, you could spiralize almost any vegetable for this recipe because the sauce is simply that delicious.

Unlike other raw vegan recipes that use cashews or almonds, this recipe calls for raw macadamia nuts. These tree nuts offer a buttery taste and creamy texture, which is why they are perfect for alfredo. Macadamia nuts contain are rich sources of monounsaturated fats, which help to naturally lower LDL (bad) cholesterol. They may also decrease inflammation, lower blood pressure, and ultimately reduce the risk of heart disease. One meta-analysis found that the regular consumption of monounsaturated fats was associated with lower cholesterol levels and better brain function.

In order to assemble this “pasta,” add the zoodles to a large bowl. Ideally, season the zoodles with a little sea salt and let them sit for 10 minutes, as this process helps draw out excess water. Pat them dry with paper towels before you pour the raw alfredo sauce over them. Toss to evenly coat the zoodles and then feel free to jazz it up with some chopped raw parsley, green onions, or even chopped raw macadamia nuts.

We aren’t going to knock peanut butter, but a lot of store bought varieties contain added sugars and unhealthy hydrogenated oils. This recipes replaces peanut butter with raw almond butter, which is naturally rich in protein and healthy fats. Rice noodles are high glycemic and do not offer a lot of nutrients, whereas carrot noodles are fiber-rich and full of beta-carotene. The sauce also utilizes the meat and water from a young Thai coconut, which offers a lovely sweetness that complements the nutty almond butter, spicy ginger, zesty lime juice, and coconut aminos. If you want to kick things up a notch, you can add some more red pepper flakes.

What you are left with is a flavorful combination of healthy ingredients. After eating it, will you reach a state of elation? Only you can answer that. Not only does this allow for even rolling, but it also gets rid of a bitter, unpleasant, fibrous bite. To do this, simply use your knife to cut away the thick stem at the bottom of the leaf. You can also shave off the back part of the stem that runs slightly up the leaf, creating a flatter surface for rolling.

Now if rolling the leaves proves too difficult, you can always turn these wraps into tacos. That said, they are much easier to eat as wraps; not to mention, a lot less messy. The choice is yours and we don’t judge over here. The important thing is that you are making a great decision (and a healthy one at that) to enjoy this recipe as your next entree!

If we can agree on one thing, it’s that we promote the consumption of flavor-packed recipes. A romesco sauce is exactly that: a concentrated, flavorful sauce that has a variety of uses in the kitchen. Consider pesto, for example, which goes great with a variety of ingredients and can function as a sauce or dip. Romesco is similar, in that it is what we like to call: a power condiment. 

Romesco is an institution in the Catalonian region of Spain, containing many of the region’s signature flavors. There are most likely numerous variations of this sauce, but they all usually contain tomatoes, garlic, almonds, red peppers, toast bread, smoked paprika, olive oil, and red pepper flakes. Some people use it to sauce fish, while others like to use it with vegetables. For the sake of the raw vegan diet, we’ve modified the classic romesco sauce and paired it with raw zucchini noodles. 

The great part about this recipe is that it couldn’t be easier to make. As with pesto, you can use a food processor or blender to make this romesco sauce. Alternatively, you can go the old school route and make it in a mortar and pestle. Just keep in mind that going that old school route will result in a more textured sauce, but some argue that it is more flavorful. We’ll leave it up to you to prepare and decide!
