So not only does it impart a cheesy flavor, but it also supplies you with valuable nutrients that can be difficult to obtain on a raw vegan diet.

To be fair, this raw vegan parmesan recipe does not taste like regular parmesan cheese. It does enhance the flavors of dishes that would normally benefit from parmesan cheese, though. Consider adding it on raw zucchini noodle recipes, in homemade raw pesto recipes, or even as a salad topper. How you use this parmesan is entirely up to you, but it is highly versatile and easy to make in a food processor or high-speed blender. Just make sure that you do not over-blend the sunflower seeds until they become a puree. You want this parmesan cheese to have some texture.

A few tips for blending: have your food processor or blender on pulse setting. Pulse for a few seconds at a time or else you will end up with some savory sunflower seed butter if you don’t. To prevent this, stop blending and give it a mix as soon as you see the mixture start to clump. Once it reaches a nice finely ground consistency, you are finished and can pour it into a jar for storage.

Don’t want to snack on freshly cut fruit or chopped vegetables while cleansing? Time to make some energy balls! You can fully customize energy balls with different nuts, nut butters, seeds, seed butters, dried fruit, and more. This recipe, however, is nut-free and only requires three ingredients: dates, hemp hearts, and desiccated coconut. To make the quick distinction, desiccated coconut is not the same as a package of sweetened coconut flakes you see in the baking aisle of a grocery store. Desiccated coconut is unsweetened, grated coconut meat that has been dehydrated. Because it has no added sugars, the flavor is slightly nuttier.

Although any date variety will work for this recipe, we recommend Medjool dates because they are usually sweeter and more flavorful. Not a fan of dates? You can replace them with another dried fruit, such as dried figs or raisins. Just play around with the measurements in order to yield the best consistency possible. Energy balls are not an exact science, so your measurements do not need to be exact. We often eyeball each batch and they turn out just fine! If you are a stickler for the rules, though, we have the measured recipe for you to follow.

Due to the thick nature of the energy ball batter, which you form into balls with your hands, you must use a food processor. A food processor will easily blend the ingredients together until they form a clumpy, dough-like consistency. Once you achieve that, it’s time to get rolling! Just make sure that you wet your hands with water first to avoid the mixture sticking to your hands. It will yield about 10-12 energy balls, which you can store in an airtight container in the fridge for two weeks, or in the freezer for up to two months.

Trying to eat “warmer” foods on a raw diet while maintaining raw preparation can be difficult, unless you have a dehydrator. Dehydrators help to keep living foods alive, provided you don’t exceed the 115º Fahrenheit temperature. Usually, dehydrating food can take some time, but this recipe doesn’t require as much time as it takes to make chips or dehydrated fruit. This recipe only requires four hours in the dehydrator, which is great!

These raw meatballs exhibit less of an Italian flavor profile than you would expect from a traditional meatball. Instead, the flavor is a little sweeter and more akin to Swedish meatballs, minus the overly sweet glaze that comes with them. If you prefer a more savory flavor, omit the dates in the recipe. The rest of the ingredients have notably intense and briny, cheesy, and aromatic flavors.

One thing to keep in mind is that you want to thoroughly blend the ingredients, but not so much so that it turns to a paste. Everything should stick together very well, which will help the raw meatballs stay together during the dehydration process. Lastly, these meatballs will work with myriad zoodle recipes. We find that they go great with a creamy avocado sauce (click here for recipe), but a raw marinara sauce (click here for recipe) is quite nice as well. Tiger Nut Flour

Tiger nut flour contains gut-friendly prebiotics that feed that good bacteria in your gut. It can be difficult to source, but if you find it online, you can generally use a 1:1 ratio when adapting recipes with flour.

Green Banana Flour

Although green bananas are not very tasty, they do exhibit an impressive nutritional profile. What is cassava, exactly? This is a valid question because most people are not familiar with this tuber. Also known as yuca, cassava is in the same plant family as potatoes, yams, and taro. Many people mistake cassava flour for tapioca flour because they both come from yuca. Unlike tapioca flour, which is made from the drained starchy liquid of yuca, cassava flour is made using the entire yuca root, which is peeled, dried, and ground into a fine powder. It has a neutral flavor, making it a great flour substitute for gluten-free, nut-free recipes. The replacement ratio is 1:1 and it adds a light, fluffy texture to your recipes. 

Arrowroot Flour

This flour is made by extracting the starches from the tubers of the arrowroot plant and grinding them up into a fine powder. It is actually commercially manufactured from the cassava root, but it tends to include other tropical ground tubers. Occasionally, it can contain potato starch, so make sure to read your labels in case that is an issue for your diet or health. If you are looking for arrowroot flour in the grocery store, it may go under the name “arrowroot powder” or “arrowroot starch.” It is flavorless and odorless and it has gained popularity in the keto and paleo diet communities. Arrowroot flour is a suitable alternative to cornstarch and is great to use when making bread, sweets, treats, and other baked goods.
