Plus, if you get those, then you don’t have to get popsicle sticks.

You cannot beat the freshness that you get from these pineapple coconut popsicles. The coconut milk gives them a creamy texture, and it also is a perfect match for the fresh pineapple. You can cube your pineapple and freeze it overnight, or you can blend fresh cubes with the coconut milk. The great thing about these strawberry coconut popsicles, besides the ingredients, is how easy they are to make. Throw some ripe frozen strawberries, coconut milk, lime juice, and maple syrup into a blender and blend until creamy. The consistency will be similar to that of a smoothie, only it won’t be as thick. Pour the mixture into your popsicle molds (a key item to have if you enjoy making your own pops) and then place them in the freezer for about three to four hours. Make sure that the sticks go into the pops before you freeze them. If your mold doesn’t have tops with sticks, you will need to use popsicle sticks. A great trick is to let the popsicles freeze for like 30 minutes before inserting the sticks. That will help the sticks remain upright in the center of each pop.

These strawberry coconut popsicles are like a smoothie/milkshake hybrid. In fact, you can simply enjoy this exact recipe by pouring it into a cup and drinking it through a straw. As the days get warmer, you need lighter meals that don’t weigh you down. You also need refreshing snacks and dessert options to cool you off. Although it isn’t quite summer yet, nothing screams warm weather like a homemade popsicle. In fact, we’d argue that popsicles are the quintessential warm weather treat because they are both sweet and refreshing. They are even better when you eat homemade ones that are free of preservatives, dyes, and added sugars.

Before you get started on making these popsicles, we need to cover a few popsicle-making basics. First, you’ll need a mold for your popsicles, ideally one that is silicone because you can remove the pops more easily once frozen. Some molds come with reusable handles, while others do not and you have to go old fashioned with wooden popsicle sticks. If you don’t have a popsicle mold, you can use small paper or plastic cups and wooden sticks for the handles. If you want to make popsicles on a regular basis, though, consider buying a reusable mold to cut down on waste.

When you fill your popsicle molds with the blended cantaloupe mixture, keep in mind that liquid expands as it freezes. For this reason, leave a little room at the top to allow for expansion. You should also freeze your popsicles for about 20-30 minutes before inserting the stick. That will prevent the sticks from falling over to one side. Because cantaloupe is so sweet, you don’t need additional sweetener. The pineapple provides a complementary tartness, while the homemade almond milk makes these pops taste extra creamy. The great thing about a popsicle is that it doesn’t have to an elaborate concoction of artificial flavors, sweeteners, and preservatives. Shocking, we know, but the majority of store bough popsicles contain those ingredients. Plus, there is nothing natural about the “natural flavors” that you see on popsicle ingredient labels. Needless to say, you don’t have to worry about any of those things when you make this recipe.

These pops contain three ingredients: cherries, freshly squeezed lemon juice, and raw agave nectar. The cherries have natural sugars, but the agave helps to balance out the tart flavor that the lemon juice brings to the party. It may seem odd to add lemon to these popsicles, but it actually brings out that vibrant cherry flavor. We have no say in whether or not these will temporarily stain your tongue or lips, so we apologize in advance.

The hardest part of these recipe is pitting the cherries. This is a tedious step, but it is ultimately worth it. Should you want to avoid this step, you can purchase frozen cherries. If you get frozen cherries, make sure you thaw them out prior to blending them with the lemon juice and raw agave nectar. Lastly, when it comes to the mold you use, we advise that you use a silicon mold with wide wooden popsicle sticks. Silicone molds make it so the pops come out more easily.
